Blueberry Cream Muffins

Great! I use fat-free sour cream and replace some of the oil with applesauce. If I had enough eggs I would've replaced some with just whites. I did add a sprinkling of cinnamon and nutmeg and replaced some white with brown sugar. I did not add extra sugar as others suggested, but I did add extra blueberries, that's the best part! I will make these again!

Todd's Famous Blueberry Pancakes

Delish! I didn't let it wait an hour and used fresh blueberries, but otherwise followed everything. Made with Blueberry Breakfast Sauce with fresh blueberries too. I will definately make this again and use it for my base recipe. Perfectly fluffy and not too dense.

Best Ever Blueberry Cobbler

This was delish. My hubby's customer has a organic blueberry farm and gave him tons and tons of fresh picked organic blueberries. They are fat too! This was my first blueberry cobbler b/c I usually don't eat blueberry stuff that tastes like store pie filling. But this was so yummy! I made 1 1/2 crust (except only one egg) and upped the blueberries to aoubt 5 cups (and it still didn't make a dent!). This was perfect, not too sweet, yet flavorful. The crust is not entirely cake-like, the bottom texture is, but the top layer was like a crisp cookie, sort of tasted like a sugar cookie. I didn't double the butter, I actually used about 3Tbls. less, which I usually do anyways. I added a sprinkle of cinnamon and nutmeg in both the berries and the cobbler. And I served with frozen cool whip free. I will definately make this again.

Easy Cheap and Yummy Casserole

I call this corn dog casserole. My family loves it, it's perfect for my picky eaters. I used my own homemade sweet cornbread recipe instead of box mix. I used some leftover baked beans from our cookout and a 22 oz. can of bush's grilling sensation steakhouse beans. Yum. It took forever for me to cook it, over an hour. But that was my fault. Since I had less beans I used a 9x9 pan and it ended up filling to the very top with cornbread. I also started the first 45min at 375 degrees b/c that's what my cornbread recipe calls for. It was still liquid so I bumped the temp up to 425 and cooked it for about 20-30 min longer. I also used some shredded cheese it it. I will make this again.

Caramel Apple Pork Chops

This did not work out for my family, everyone but me is a picky eater though, so I was fair and gave it four stars. It was somewhat blander than I'm used to. The actual diner I made tonight I would only give one star, but to be fair I gave this four b/c the idea of it was great. I might have over cooked mine also and I'm not a super fan of pork chops.

Brisket with BBQ Sauce

Oh my, this was the best BBQ beef ever!!!! Better than restaurant. I didn't measure, just eyeballed and it turned out excellent. I will definitely make again with two, so next time there's leftovers for garlic bread sandwiches or one plain for use in chili or something. Oh this is heaven. I'm in love with this meat.

Buffalo Chicken Dip

Delish. My hubs made this same dish from a coworker's recipe. We use a couple boiled chicken breasts instead of canned. We like to play with the hot sauce and ranch levels by taste. Sometimes we use mozzarella cheese. I love to sprinkle on some blue cheese crumbles while it's warm. We just mix it up and bake it! Great with hearty multi grain tortilla chips. Oh I like to use leftovers (if there is any) on a home made buffalo pizza.

Fluffy Cake Doughnuts

Eh. I wasn't expecting krispy kreme style, but I was expecting a just okay cake doughnut and I'm not sure if I even got that. Maybe I messed something up? Maybe b/c I don't have a doughnut pan? That's why I didn't give it under 4 stars. But it was kinda ick and tasted kinda like a plain dough brick that sat in your belly and made it hurt. I think I'm just gonna give up on a decent for you doughnut idea, should've known better!

Grandmother's Buttermilk Cornbread

Excellent if you're looking for the sweet and moist cornbread, not the dry bland kind. I never buy buttermilk I just add a splash of apple cider vinegar to the regular milk when I measure it out, just stir and let sit for a min or two. I love to add a dollop of sour cream for extra moistness in my cornbread when mixing. And I add a handful or two of shredded cheddar and a spoon or two of the pre diced jalapenos in a jar. Yum yum, sweet and spicey. This is my new favorite cornbread recipe! Oh and I don't melt the butter in the skillet, I melt it in a pyrex measuring cup in the microwave, stir in sugar, and temper the eggs so they don't scramble.

Parsnip Pancakes

Yum! Love it with a dollop of sour cream and a sprinkle of Tony's (Chachere's), but I love that on almost everything. I also tried it with mashed or shredded potato in the mix when I don't have enough parsnips. I also shred the onion.

Six Week Bran Muffins

Great recipe for me, I'm a habitual cereal waster. Mine baked fast less than 20 min, could be a smaller pan? Next batch I'll try a lower temp and a bit less time and go from there. 400 deg and 15 min worked perfect. I scale the recipe down to 36. I've tried replacing all the shortening with the applesauce and it turned out great!

Zesty Porcupine Meatballs

Yum. I use ground turkey, about a half pound, and double the rice to make them more porcupiney. I use regular short grain rice cooked less time with less water (about 1 part to 1 part). I bake in a glass 9x13 pan at 400 for 20-25 min than add the sauce mixture and cook another 10-15 min. Delish. Sometimes I sneak finely grated carrot into the meatball mixture or some v8 instead of soup.

Leftover Pot Pie

I like this with the Grandma Ruth's crust on this site and leftover turkey. It is also good if you mix some leftover stock from another leftover turkey meal with a can of golden mushroom soup and cornstarch to thicken. I use the frozen mixed veggies with the diced carrots, peas, corn and green beans. i like to add leftover potatoes too.
