Grandma's Butter Noodles

Easy and delicious, used in chicken noodle soup made with leftover rotisserie chicken. I didn't allow drying time and I think they turned out just fine. I used lots of flour when rolling and cutting.

Miss Betty's Super Quick Dinner Rolls

Not bad for a quick last minute bread. Although it doesn't use it in the ingredients, it almost tasted like packaged baking mix. Worth trying again with some tweaking. I think next time I will add some mix ins for flavor.

Baked Ziti II

This was delicious! I used rotini because that's what I had on hand. I added some garlic and fresh basil to the mixture too, just because I do that with all my pasta. I also used up about a half pound of cooked and crumbled Italian sausage. This was a recipe for me to use up some foods. I read reviews about it being too dry so I baked mine with foil and than 15 min at the end without foil. It was not dry, very moist, cheesy and flavorful! I am definitely making this again.

Baked French Toast

OMG! There is not a word good enough to describe this! I had a whole loaf of my homemade braided bread sliced. I only used 6 eggs with some vanilla soy. (We don't do regular milk). It was plenty egg mixture. I added a dash of nutmeg, just b/c I love nutmeg in my french toast. it sat in my fridge overnight and the next day until I baked it for dinner, still turned out delish. I halved the brown sugar mixture just b/c I didn't want to pour that much sugar butter over my french toast! But it was still plenty! I baked covered for 20 min than added the sugar mixture and than continued baking uncovered for 20 min. I love this recipe! I even bumped up the temp to 400 for the last half to oven bake some bacon. Perfect!

Double Layer Pumpkin Cheesecake

OMG this is so good! I used the can of pumpkin pie mix instead of pumpkin puree and adding the spices. There's enough pie mix leftover to make a pie or pumpkin bread or pumpkin something else with. i don't understand why the recipe says to take it out of the oven before the center starts to set, I did and the center was still gooey and had a pudding texture. I would bake it until it is entirely set.

Delicious and flakey. You can NOT prebake the crust with this recipe with the high shortening content it will melt in your pan. Keep it cold.

Chicken Enchilada Soup III

I love this soup! It tastes just like the one from Chili's. I used leftover rotisserie for my broth (cover the whole thing with water and boil) and for my shredded chicken. I used the masa harina, I had it from another recipe, but using the corn tortillas sounds like a great idea too. I will definitely be making this again!

French Bread

Perfect. I do proof my yeast beforehand (warm water, dissolved yeast, and a couple spoons of sugar, let set, if it foams the yeast is good). I learned my lesson the hard way to always check the yeast. Also don't let it over rise, it will fall and get flat and dense. This turns out great even though it uses all purpose flour. I make my three slashes before the second rise.

Oatmeal Pancakes II

Oh my these are great! With some real maple syrup on top or with bananas and nuts. Any ways you serve them these are wonderful. I've tried subbing white sugar for brown when I was out, and egg for 2 egg whites, even oil with applesauce. Great as is and great to play around with. I use old fashioned oats, b/c that's just what I keep. I see no difference since it's blended to oat flour anyways. This recipe as a serves 4 fits perfectly into my mini blender (it's a desert trading co magic bullet). Clean up is a breeze. They freeze wonderfully for busy school mornings.
