Butterscotch Cookie Bars

These are super easy to make and very sweet! They have a chewy texture, more like a brownie. The batter is really smooth and it didn't look like it would fill the pan, but it worked great. I think white chocolate chips would be a good addition. I did not think raisins would be a good combo with the butterscotch so I skipped them. Big hit with the kiddos! Thanks.

Holiday Hot Spinach Dip

this is a great recipe to bring to a potluck. very quick and easy. I put a can on diced tomatoes with chiles in it instead of the red bell pepper and that was great! thanks.

Disappearing Marshmallow Brownies

This batter was thick like candy, I wasn't sure they would turn out, but it was quite delish. They did stick a little to the side of a non stick pan. I would make these again!

Ground Pork Omelet

This is an excellant recipe! My kids love this dish! It is great with a little Thai hot sauce on the side. I serve it with a brothy soup and lots of white rice. So delicious, you should try it.

Coconut Bread I

Very tasty, not too sweet. I think it could be baked maybe 10 minutes longer, though. The inside was a little mushy. I didn't have coconut extract so I substituted vanilla extract. You can make your own self rising flour by adding 1.5 tsp of baking powder per cup of flour and 1 tsp of salt. Thanks for the recipe!

Red Fish Soup

I USED THIS AS A BASE RECIPE AND IT IS VERY GOOD WITH CHICKEN STOCK USED INSTEAD OF PLAIN WATER. I ALSO ADDED A LITTLE GARLIC AND I COOKED THE RICE SEPARATELY AND POURED THE SOUP ON TOP. THANKS FOR THE RECIPE IDEA!

Indian Style Chicken with Apples

I liked this but the taste was delicate, could use more spices and a little less yogurt. Also, would be better if the chicken had more of a stewed texture and fell apart more, instead of in the browned slices. Maybe could cook a little longer in the broth next time. Will make again with a few changes.

Arjun's Lime Chicken Rice

This was easy to make and was fresh tasting. I substituted turkey for the chicken breasts and it was fine. Served with the Beautiful Salad recipe and crusty bread for a delicious easy meal for company!

Broccoli Chicken Casserole I

I used Cream of chicken condensed soup with herbs instead of Cream of mushroom and added lots of sauteed onion and garlic to the chicken breasts. I did not make a breadcrumb or stuffing topping. I added a little sour cream and a bit or worchestershire sauce. I thought this was quite good over rotini pasta. It would have been nice over rice also. I did up the broccoli so that there were more veggies. Next time I might add a little julienned carrot or red bell pepper for color. It is basically a good recipe, kinda thick, so maybe a little chicken stock added would be good.

Potato and Cheese Frittata

THIS WAS VERY GOOD. MY POTATOES GOT A LITTLE MUSHY INSTEAD OF CRISPY BUT THEY BAKED UP NICELY IN THE OVEN. I ADDED GREEN PEAS AND ACTUALLY USED 5 EGGS INSTEAD OF 4 AND TWICE AS MUCH CHEESE. WOULD BE GOOD WITH A LITTLE CRUMBLED BACON OR HAM, TOO.

I have made this 3 times, and my family really likes it. We even forgot the chips last time and it was still good. I did add black beans and salsa, I think black olives would be good also. Great quick dinner that kids love!

Slow Cooker Vegetarian Minestrone

This was good, I added Ro-tel tomatoes which made it a little spicy for my audience so I added extra macaroni. It seemed thin in taste a little, but I guess that just needs some tweaking. I also might add extra beans next time.

Macaroni and Cheese V

I liked this recipe. I made it without onion for personal preference and added more cheese, including parmesan to the sauce mixture. I used evaporated milk for extra creaminess. I'm not sure how I feel about the breadcrumbs...might try a different topping next time.

Shepherd's Pie VI

Use a good quality brown gravy mix and lots of onion and garlic for best flavor. I added large carrot chunks instead of a puree, so my son could easily pick them out if he so chose. I like peas in this as well and lots more cheese on top. Very hearty supper. Thanks for the idea.

Balsamic-Glazed Salmon Fillets

I did not care for this. I feel like I wasted a perfectly good piece of salmon. I like all the ingredients but together I did not think it brought out the best flavor. Maybe less mustard and more fresh herbs next time. I may try the glaze on chicken next time around.
