Low Carb Zucchini Pasta

I call it Vegetti because that is the tool (looks like a giant pencil sharpener) that I use. I lightly salted mine and wrapped it paper towel to get out excess moisture. I think dropped it into boiling water with garlic for just 2 to 2-1/2 minutes. Served it with meat sauce and parmesan a had a huge plate of "pasta" without all the calories.

Sarah's Rice Pilaf

Great recipe and so much healthier than the boxed pilaf. I added 1/4 tsp. turmeric, 1/4 tsp. paprika and 2 tsp. parsley. This will definitely become a staple in our household. I did not add any salt so the only sodium came from the chicken broth.

Balsamic Cream Sauce

I made this sauce and added browned chicken and fresh mushrooms served over pasta. It was so flavorful and delicious. I used milk and will try cream next time. I added 3 tablespoons balsamic vinegar and more Parmesan cheese but other than that changed nothing.

Chicken Cacciatore

Very good. I added more garlic powder and used a 3-blend pepper and onion mix. Also cooked longer than 5 minutes as I feel canned tomatoes and sauce need time to blend with the spices and 5 minutes isn't enough.

Pork Chop Skillet Dinner

After reading the other reviews about this being bland I added 1/8 tsp. crushed rosemary, 1/4 tsp. oregano and 2 tsp. light brown sugar. I found it to be very tasty. I used a pork tenderloin cut into medallions (seasoned with garlic pepper before searing) but found that the amount of rice was too much. Next time I will cut down on the amount of rice.

Hot Artichoke and Spinach Dip II

I added 1/4 cup sour cream, used 12 oz. of chopped spinach and Lawry's Season salt instead of regular salt. I thought it was very good, as did my daughter. Definitely will make this again.

Byrdhouse Marinated Tomatoes and Mushrooms

I made these for a family get together where I had to bring the relishes and they were a big hit. I substituted extra virgin olive oil for vegetable oil and marinated them overnight.

Festive Tossed Salad

Having been assigned a green salad for our family pot luck I decided to make this and it was a huge hit. I had to make for 30 people and used a combination of Spring mix (Mesclun) and chopped Romaine lettuce. I also used grape tomatoes and added sliced almonds.
