Healthier Quick and Easy Alfredo Sauce

I have used this recipe for quite a while. I use neufchatel cheese instead of fat free cream cheese and "I Can't Believe It's Not Butter" instead of butter. I also add 2 cloves of freshly minced garlic and a dash of salt. The garlic and salt gives the sauce an extra boost of flavor. We usually have this with smoked salmon and pasta-delicious!

Crab Stuffed Mushrooms

I made these for my dad's 60th birthday party and someone asked which restaurant they came from! These are great and easy! I live in Seattle, so I was able to get some great fresh crab meat from Pike Place Market. The only change I made was to use about 9-10 oz of crab meat because I wanted more crab flavor than anything else. My brother-in-law was eating the filling out of the bowl! Will definitely be making this again.

Chicken and Red Wine Sauce

This was really delicious! We love red wine, so I figured I couldn't go wrong with this recipe. I added in a few extra cloves of garlic and reduced the brown sugar to just half a cup. I added about a teaspoon of cornstarch/water mixture to thicken up the sauce at the end and served it with steamed broccoli and garlic mashed potatoes (we also love garlic)!

Rockin' Salsa

The first time I made this, my husband ate an entire pint in one sitting! I'm making another batch today-the first only lasted a few months! Headed to the farmers market to get my ingredients! YUM! Only changes I made were using 1 green bell and 2 reds (I don't like green bell peppers) and I added 3 jalapeno peppers (no seeds) and cilantro. Delish!

Scalloped Potatoes and Onions

These are the Best scalloped potatoes! I've made them several times and the only change I made was to add ham and top it off with French's fried onions for the last 10 mins of cooking (uncovered). Delish!

Apple Cider Chicken Marinade

This is a great marinade. I love it just the way it's written as well as with 2 tbsp's soy sauce and 1 tbsp brown sugar. I usually use dry herbs because that's what I have on hand. Wonderful!

Gerry's Chicken Enchiladas

I think I could make this every night and my husband would be the happiest husband in the world! I love this! Sometimes I use flour tortillas, depending on what I have at home and I love olives, so I add sliced olives on top before I bake it.

Stuffed Jalapenos III

I love this recipe because they are so easy to make and taste great. I like a add a little bit of garlic salt and finely chopped onion to my cream cheese. It gives them great flavor!

Sassy Steak Marinade and Sauce

This is definitely a keeper for steak marinade. It kind of reminded me of the sauce that PF Changs uses on their equivalent to General Tso's. I only marinaded the steaks for about an hour and cooked them on the George Foreman. Excellent! We're trying the marinade on chicken tonight! :)

Award Winning Soft Chocolate Chip Cookies

This is my new favorite cookie recipe. I didn't have instant vanilla pudding mix, but I had chocolate-so I made chocolate chocolate chip cookies. That was a great way to add chocolate flavor withouth the cookies being overwhelming with chocolate. We used some to make ice cream sandwiches-great cookie for those! LOVE IT!

Vegetable Wild Rice

Alaska Salmon Bake with Pecan Crunch Coating

This is one of my top 5 salmon recipes. We have salmon quite often due to living in the Pacific NW. I did change the recipe a little buy using half the butter in the spread and drizzling the rest on the top of the salmon. This gave it more of a crunch. It was hard not to just eat the topping!!

Farmhouse Chicken

This was so easy and great for left over chicken. I used one can cream of celery and one can cream of mushroom and cornbread stuffing mix. Great for a cold October night.

Baked Crumbled Chicken

My fiance and I made up a recipe for "Smart Start" chicken. I found this recipe and incorporated it into ours. Our favorite is using a sweeter cereal, such as Smart Start and adding about 2 Tbsp of brown sugar to the cereal mixture. Either way, WE LOVE THIS RECIPE!
