Corn and Crab Cakes

Reviewed: May 1, 2011
Easy. Relatively simple and cheap ingredients. And tasted great! I did refrigerate the mix for 15-20min before making them into patties and I think that helped. I love corn and I love crab cakes!

Chocolate Peanut Butter Pie II

Reviewed: May 1, 2011
Amazing recipe! I used 3 fat-free chocolate pudding cups and 1/2c reduced-fat creamy peanut butter in an Oreo crust like the other reviewers recommended. So easy and definitely didn't taste like reduced-fat/fat-free ingredients! I made it for my mom who loves chocolate-peanut butter stuff and she thought it was great

Earthquake Cookies

Reviewed: May 1, 2011
Quick and easy to make and tasted good. I made these for a bake sale with devil's food cake mix. Next time I'll add peanut butter chips or white chocolate chips.

Can't Tell They're Low-fat Brownies

Reviewed: Apr. 1, 2011
These were really good! I used apple sauce instead of prunes. Increased the vanilla to 1tsp. And added some mini-chocolate chips on top. It tasted a little more like a cake than a brownie but it was so moist!

Curried Rice Pilaf

Reviewed: Mar. 10, 2011
I really like this rice! I think the almonds and the raisins really make the dish. I used brown rice to make it more healthy and added 2 cans of chicken broth. The first time I made this on the stove and I think there wasn't enough liquid because the rice still turned out a little hard. The second time I made it I added water to the chicken broth and threw everything into the rice cooker except the almonds. Turned out great and was even easier to do!

Wonderful Banana Cake

Reviewed: Mar. 10, 2011
Wonderful simple recipe! I substituted applesauce for the oil to make it healthier and used 3 bananas. Since my bananas weren't ripe, I put them in the oven cold and heated it up to 300 degrees until the bananas turned brown. The cake was wonderfully moist and enjoyed by all my friends!
