The Best Fresh Tomato Salsa

Reviewed: Oct. 21, 2011
I added a bit of sugar to this salsa, maybe about a half teaspoon and squeezed in a little more lime juice than the recipe called for. It was delicious.

The Best Rolled Sugar Cookies

Reviewed: Mar. 5, 2011
These cookies are easy to roll out, just sweet enough, with great flavor and crunch. Perfect! Since discovering this recipe for making bells and stars at Christmas, I now keep the cookie dough in the freezer so that I can make cookies on short notice. For Valentine's day, I made 50 heart shaped cookies for my grandsons' school. Last night the 3 year old and I made dinosaurs. I rolled them out and he cut them out, also sprinkled on the sugar. Lots of fun for both of us!

Curried Coconut Chicken

Reviewed: Mar. 30, 2010
This is so delicious and easy. I sometimes add some frozen peas at the end of the cooking time and serve with a sprinkling of fresh coconut. I usually cook only for myself so halve the ingredients. Since I have a half can of each of the liquid ingredients left, I freeze them together in a container to use the next time I make the dish. It is so good heated up the next day along with rice when I get home from work.

Stuffed Green Peppers

Reviewed: Jul. 19, 2009
These were great!! I followed the recipe loosely making a few small changes. I sauteed onion, garlic, the chile powder and a few cumin seeds in olive oil. When onion was golden, I added cooked brown rice and black beans. Before stuffing and baking, I had blanched the peppers, after removing membrane and seeds, I plunged into boiling water for about 1 minute followed by a quick plunge into cold water. After stuffing with rice/bean mixture, I topped each pepper with tomato sauce, and a good amount of grated cheddar cheese. I baked, covered with foil, until peppers were tender and cheese melted. I served with hot sauce and more tomato sauce. I love the fresh taste of organic Muir Glen tomato sauce which you can find in the natural food section of the supermarket.

Pasta Primavera with Italian Turkey Sausage

Reviewed: Jul. 6, 2008
Such a delicious recipe! I prefer sweet chicken sausage with the hot pepper flakes. I used drained Muir Glen organic tomatoes instead of the fresh roma. Like others suggested I used only 1/4 cup olive oil. I passed parmesan to sprinkle on to taste and served it over whole wheat pasta to make this a healthier dish Loved the fresh basil. I plan to make this again soon.

Baked Slow Cooker Chicken

Reviewed: May 3, 2008
I was surprised to find that the chicken had browned so nicely in my Crockpot. I followed the recipe exactly except put cut up carrots under the chicken along with the foil. The meat was very very tender after cooking on low for about 9 hours and tasted great. Nine hours might be a tad too long however so next time will try to keep it to 8 I want to try it with different seasonings and maybe some potatoes along with the foil. I served the chicken and carrots with some leftover cooked brown rice which I had in the fridge, drizzling the juice on the rice. So nice to have a delicious meal all ready when I arrive home from work.

Maple Salmon

Reviewed: Jun. 12, 2007
This was delicious! My daughter loved it as did my 4 yr old grandson. I did not have garlic salt so did not use. I had it with brown rice and a green salad for a perfect nutritious meal. Since I usually cook only for myself, I used 2 Tablespoons of maple syrup and 1 tablespoon of soy sauce. I used real maple syrup which I think is important for the subtle taste of this dish. Thank you for a great recipe

Whole Wheat Banana Nut Bread

Reviewed: Mar. 17, 2007
This has a fine, tender texture and nice flavor with just the right amount of sweetness. I used 1/4 cup honey and 1/4 cup brown sugar since honey is quite expensive. It was just as good after a night in the fridge. The next time I make it, I intend to add raisins. I will definitely make this again
