Pasta with Asparagus

We enjoyed this recipe, it was a great way to use our own garden-fresh asparagus. But next time, I will add garlic and leave out the crushed red pepper. I will definitely make it again, though.

Rempel Family Meatloaf

My family really enjoyed this meatloaf. I used a mixture of ground beef and ground pork, as I always do with any meatloaf. I doubled the recipe and made two loaves, and since I only had one package of dry onion soup, I also added some dried minced onion. I was glad to find another use for the A1 Steak Sauce in my frig, since no one ever puts it on their steak!

Savory Spinach Casserole

I'm afraid we didn't care much for this recipe. I thought the cream cheese would melt down into the spinach, but it remained in a thick layer on top while the spinach below stayed dry. I had pressed the water out of the spinach after I thawed it. Maybe I wasn't supposed to?

American Lasagna

I liked this recipe a lot, but I agree it was just a little too dry. I didn't end up with enough sauce to adequately cover the top, so I may increase the sauce recipe next time, and freeze any that I have left over. It's very similar to a recipe I've been using, but the addition of the brown sugar made a difference that I liked.

Exquisite Pizza Sauce

I really enjoyed this sauce, and will definitely make it again. I will use a little less honey next time, as I thought it was just a tad too sweet. It was so much better than the average pizza sauce. Those are always too harsh and sour for me, so this one was a refreshing change.

Scalloped Potatoes and Pork Chops

While this was very tasty, I can't rate it very highly for visuals. I found the butter to be unecessary, and it added a greasy texture to the entire dish. Also, while the cheese and milk mixture made a delicious combination, the milk appeared curdled; not the most appetizing-looking meal I've ever put on the table. Still, it's the taste that counts most, and this recipe had that going for it.

Alfredo Light

My husband and I really enjoyed this recipe and I will definitely be using it again. I try to fix as many low-fat, low-cholesterol meals as possible, and I knew it was a winner when he looked at me suspiciously and said "You put cream or butter into this, didn't you?" Success! I took the advice of the other reviewers and added an extra tablespoon of flour, and I also added a package of small, pre-cooked shrimp to make it more of a "main dish" meal. It was just as good reheated the next day.
