Cake Mix Cookies I

I love cake mix cookies. They are simple to make, which is great if you don't have alot of time to make cookies from scratch. Everyone that tastes my cake mix cookies always ask what my secret is. They come out soft (just leave them in longer if you want them hard), but they are firm cookies so they are easy to decorate with icing... Or you can leave them plain and they taste yummy too! My personal favorite cake mix cookies is the "funfetti" kind (white cake mix with rainbow sprinkes in the mix). They add a cool effect to an otherwise plain sugar cookie. TIP: Instead of spooning the dough onto the cookie sheet, chill the dough 15 minutes and lay out some wax paper to roll out all the cookie dough... This recipe works great with cookie cutters!

Royal Icing II

This is the BEST icing recipe ever. I didn't use it for gingerbread houses though; I wanted an icing that dried hard and shiny so I could stack multiple cookies together. This stuff tastes great, and dries quick. Works great with food coloring. I put the icing in piping bags (or ziploc bags) and cut a little snip off at the end. Icing holds its form well, so you can do intricate designs. I don't have a hand mixer, so I found I needed to add a dash more water to get it mixed properly. Definitely would reccomend this recipe. Sugar Cookie Icing

This icing was alright.. the consistency was really really thick at first (definitely needs more milk than it calls for, I doubled what it said) and afterwards thought I should probably double the almond extract too. For me, the end result was an icing that had too much almond flavor. My boyfriend liked the icing, though, but it was a little too much almond for me. It does dry nicely. I think that next time I use this recipe I will use vanilla extract instead of almond, and double what it calls for in milk.

Rempel Family Meatloaf

I really liked this recipe. It was a little oily, but I followed someones tip about placing a slice of bread in the pan to help absorb the grease.

Baked Ziti I

I love this recipe!! I made two for a potluck, one meatless & one Italian Sausage and EVERYONE loved it. The sour cream actually goes well with it, I wouldn't skip it -- but I did substitute 1/2 of the sour cream with ricotta cheese. I also added fresh garlic to the mix. It all turned out so delish! Some people reviewed this recipe and said it was bland. I think if you use a plain spaghetti sauce, it will be bland with no added seasonings. I used Garlic & Herb flavored sauce for my vegetarian one, and used Italian Sausage & Garlic flavored sauce for the other. 5 stars!!

Texas Ranch Potato Salad

I thought this was an awesome change to the regular potato salad. I made it at a BBQ, and the only thing I changed was I added a few extra ingredients.. sliced black olives, hard boiled eggs, and a 1/2 cup sour cream. It was excellent!! Everyone loved it. I would definitely recommend this recipe.
