Savory Mushroom Sauce

This recipe does has a floury flavor. I had to add a lot of spices before I would add it to my chicken. It is a good base for your own creativity.

Ooey-Gooey Cinnamon Buns

These cinnamon buns were excellent right out of the oven and I got rave reviews from the people I shared brunch with that morning. However, later that day they were like a brick. The only saving grace was the microwave to soften them again. For the amount of time it took to make them and the short amount of time they were actually good, it was not worth it. Next time I use this recipe I will only bake 6 at a time to save on the waste, I threw away half the batch.

Chocolate Chip Oatmeal Muffins

These were great. My two year old loves them and has no idea that there are healthy ingredients in them. I have made them a couple times now, each time using less and less sugar and using different kinds of flavored applesauce. They have been great every time. They are moist and delicious. I always make them as mini muffins, so if that is something you are interested in, bake them at 350 for 15 minutes. The recipe then yields 24 mini muffins. This is a definite keeper.

Broccoli-Stuffed Sole

This recipe is one that I will not be making again. There was far too much stufffing for the sole and the rolls did not stay closed. The flavor was bland and boring. Had to put extra cheese on top to make it the least bit palatable.

Sweet and Sour Meatballs I

I have been making this recipe for years and was happy to see it here. I have made it with all types of jelly including, peach, apricot, and fig so use whatever you have on hand. Try and stay away from jellies that have fruit chunks in it though because the sauce never tastes as good for some reason. Anytime I have a potluck to go to this is what I make and it always disappears. We live in North Africa now and I still make them whenever I have the right ingredients. You cannot go wrong with these meatballs they are a winner every time.

Rice and Lentil Soup in a Jar

This soup turned out well. I did make many revisions based on the fact that I live in the middle east and converted rice is not an option and green lentils can be very difficult to find. I used all red lentils and a grain called farro in place of the rice. I created my own seasoning mix similar to what would be in poultry seasoning and used fresh made chicken broth instead of water. To top the soup off and give it some color I added diced fresh tomatoes. Very hearty and perfect for a cool day.

Creamy Rice Pudding

This turned out pretty good, however, I did not add the last 1/2 cup of milk because if I had the pudding would have been soupy. This may be because I am in Africa and the altitude is different however. I did not add raisins and instead of vanilla (it is very expensive here) I added some cinnamon. It made a delicious dessert on a cold desert night. Thanks for sharing.

Tasty Lentil Tacos

These were delicious and I wish that I could give them more than 5 stars. My husband has never really been a lentil fan and having moved to Africa, lentils abound. Other then the lentil mixture being too spicy for my kids, I did not miss the meat in these tacos. I have made it again several times, a little less spicy, and all have enjoyed them. Probably my favorite recipe that I have gotten off this site. Thanks for sharing.

Honey Mustard Chicken

This was a great variation from traditional honey mustard chicken. My husband enjoyed it and my picky 3 year old devoured it. The only reason it is not a 5 star recipe is that the sauce was too sweet. I added extra curry powder to give it a little kick, but, next time I will cut back on the honey, or the jam. All that aside, it was great and I will make it again.

Hamburger Hash Browns

I give this recipe a 4 because of all the processed items in it. I used this recipe as a base and completely overhauled it with fresh ingredients. It significantly increases your prep time however. 1) Use fresh potatoes, peel and grated. Parboil and then saute in a pan with a bit of oil. 2)Cook meat as the recipe states. Use homemade gravy instead of pacakged. 3) Slice onions and dip them in buttermilk, dunk into flour seasoned with Italian seasonings and pan fry. Follow the rest of the recipe as stated. My kids love this recipe because they think the potatoes are french fries and hubby loves it because it is meat and potatoes. Thanks for the recipe.

Braised Balsamic Chicken

Only reason I did not give this a 5 is because of the changes that I made to the recipe. I do not like to use ingredients out of a can if fresh ingredients are available. I used all fresh ingredients. Instead of the can of tomatoes, I diced 6 fresh tomatoes and added some fresh juiced tomato juice to add to the sauce. I used fresh garlic and fresh herbs. The meal turned out to be fantastic and when served with some steamed broccoli and mashed potatoes, it was very well rounded. Hubby loved it, although the kids passed because it was very "brown". Will make this again.

Spinach Quiche

My comfort food is quiche and when I have a rough day, it is what I crave. Just the smell of this quiche cooking is enough to make me smile. Like other reviewers, I also reduced the amount of butter. I used a cream cheese instead of feta (feta is hard to find where I live in the world) and it was delicious. I also made my own pastry as pre-packaged pie crust is not an option here either. It may have been my gas powered stove that increased the cooking time as my took longer than an hour to cook properly. I cut out the mushrooms and added red pepper for color. The end product was delicious and I know I will make it again.

Oatmeal Raisin Cookies VI

Hands down, the best oatmeal raisin cookie recipe I have ever made. Moist and sweet = delicious. Both my kids inhaled these. I could not keep up with the demand. I do not know what made them so perfect, but, they are, and that is all that matters. I do think that portraying these as healthy cookies though is quite deceiving. A cup of butter is not health food. But, I would not have it any other way. A cookie is intended to be a treat!

Sweet Corn Bread

I have made this recipe a dozen times since finding it. It is the best cornbread I have ever made. I usually use plain yogurt in place of sour cream because where I live, sour cream is difficult to find. Seriously delicious.

Karen's Baked Banana Stuffed French Toast

My son is a picky eater and devoured his banana stuffed french toast. I sliced the bananas as other reviewers recommended. I also added a layer a nutella on the bread before adding the bananas. We topped ours off with whipped cream and strawberries. It was delicious. I will make this again.

Watermelon Granita with Champagne

This is quite good. I was making it for kids, so, I used sprite instead of champagne. The kids loved it. I cut back on the sugar significantly because the watermelon I had was incredibly sweet already. I would make this again, with champagne next time for an adult crowd. This recipe made more than 4 servings, but, is an excellent way to use up extra watermelon. It took closer to 4 hours for it to freeze properly.

Fresh Cherry Crisp

I make a lot of fruit crisps. I always use fresh fruit to make them. This is a good base recipe, but required a lot of changes. First, use only 1 cup of sugar to cover the fruit. Second, use only 1 cup of flour for the crumble topping, 1/2 cup of brown sugar and 1/2 cup of oats. Eliminate the shortening and use only butter. This created a nice balance of sweet and tart. By using all the sugar included in this recipe you would completely overshadow the sourness of the sour cherries. If I had followed this recipe exactly, I probably would have only given it a 2 or a 3 because it would have been way to sweet.

Chicken and Rice Casserole II

This recipe is a great starting point for an easy casserole. You can use whatever vegetables or cooked grains you have on hand which makes it very versatile. Today I made it with quinoa and brown lentils instead of rice and blended mozzarella and cheddar cheese because I did not have enough of either. On hand today was red pepper and peas and that is what found its way into the casserole. It was delicious. I highly recommend this to anyone! The only reason this recipe is not a 5 star is because 8 tablespoons of flour for the roux was far too much. But other then that, follow the recipe.
