Split Pea Soup

I tend to throw in whatever vegetables I have so it tends up end up a little different each time but it's always yummy. I usually add a oxo tablet if it's a little bland - freezes very well.

Maple Baked Pork Loin Roast

I used 2:1 bbq sauce : ketchup instead up straight ketchup. I had to cook the roast much longer than suggested but it came out wonderful! the bottom of the roast that sat in the juices was so tender - great for pulled pork sandwich leftovers :)

Garlicky Appetizer Shrimp Scampi

I altered the recipe to sautee instead of grill. I cooked the onions(shallots) first in the butter/oil/spices, then added shrimp when onions were soft - cook until shrimp is not clear (5 min) don't overcook. Serve on any pasta. Amazing!!!

Flat Iron Steak with Balsamic Reduction

I just cooked a regular cheap steak from the grocery store... but it was delicious!! Instead of slicing the steak, I made the reduction ahead of time, and used it as a dipping sauce so the steak wouldn't dry out. Also, I cooked the reduction a little longer until it was quite sweet, and it paired well.
