Chef John's Macaroni and Cheese

This REALLY was an amazing Mac & Cheese dish. Everyone loved it. I took Chef John's suggestion, and split the difference and used about 12 oz, I like mine a little cheesier so I thought 16 oz would be too much. The best part was the Panko crumb top. It was great. This is now my "go to" mac and cheese.

To Die For Blueberry Muffins

These are great! I followed the recipe to the letter. I am neither an expert, or even intermediate cook really, but the were great! I don't have muffin pans (just small 12 cupcake pan) so I used it, filled the paper cups to the top and added the crumble and got a dozen small muffins. The muffins didn't stick or drop as some said, weren't blue and taste great! I may have to invest in some jumbo pans to really enjoy these. I'm going to try to figure out how to make orange cranberry because they're MY favourite. thanks for the recipe!

Simple Mac and Cheese

Tasty. In fact, when I fed this to my son and wife, they both enjoyed it. She called it "naughty good"...which in my books is a winner! I did add a great deal more cheese than the 1/2 cup in the recipe, which is probably the "naughty" part. Made it again today (doubled the recipe), this time I added cooked bacon, after all, whats better than bacon and cheese. I'll let you all know how it turned out, and the rest of the family's response

Three Berry Pie

Great recipe! I only had a frozen crust in the house, and some frozen mixed berries. About 6 cups, so I used them and made the recipe as directed, but added just an extra tspn of cornstarch and a less than a quarter cup more sugar because of the extra berries. I used the frozen crust and fruit recipe but added a "crisp" type crust Using: 3/4 cup flour 1/2 brown sugar 1/2 cup quick cook oats 1/2 cup cold butter and spread the crumbley mixture over top. It was excellent. I am not sure if the extra berries, or weight of the crisp caused the pie to overflow, but it did so make sure you put a try below it (you may want to line the tray with foil too) to save the tray and less mess. Everyone at the family Christmas dinner loved it

Shortbread Cookies II

I appreciate a good shortbread, although I would hardly call myself a shortbread lover. This is a very good recipe, very melt in your mouth type shortbread, which in my opinion is what makes shortbread good! I have neither a cookie press, or a rolling pin, so I rolled them into balls on the cookie sheet and pressed them down with a water glass with a floured bottom, people asked me how I got them so nicely shaped :) For variety I dipped some of them half way in chocolate, which were also a huge success (1 cup semi-sweet chips in microwave for 1 minute, dip, set on waxed paper to cool) every one enjoyed them. They said there were the "black and white cookies from Sienfeld" I obviously missed that episode, but as long as they were enjoyed it worked for me.

Chantal's New York Cheesecake

Ok, this was my first attempt EVER at cheesecake. It was quite easy, mine did crack, I baked as directed and left it in the oven for 5 hours, it cracked before then, so I didn't think it was necessary to wait any longer, the damage was done. It was my turn to bring dessert to family holidays, so I topped this cake with cherry pie filling, everyone loved it, and no one saw the crack :). It was quite tasty, next time I think I'll add the "bain marie" as one reviewer suggested, also I didn't mix anything by hand as another suggested because the recipe said "do it just the way it reads" and I didn't want to risk it. If the "bain marie" doesn't help next time, I'll go with the "by hand" suggestion. Regardless, the cake was a huge success. Even my niece, the "cheesecake" specialist enjoyed it.

Spaghetti Pie I

This was an "OK" recipe. Kids weren't crazy about it, nor was I. I found it to be bland, no one in the house cares for chopped tomato, so I used a tomato sauce as well as the tomato paste. I added a can of mushrooms as well. I likely won't make this again,or if I do, I'll have to doctor up the "crust" That was that part we found least flavourful. Thanks for the recipe anyway, I am trying to find new things to make for the family, and this was one of them.

Strawberry Muffins

There were tasty, I didn't have only strawberries in the freezer, so I used a "mixed field berry" blend. They were good. The younger boys didn't care for them too much, but the teens loved them.

Chinese Chicken Fried Rice II

This recipe was great! It was a last minute decision for me to make it, so I made the rice, put it in a shallow pan and stuck it in the freezer to cool it down to the right temperature (cold). I Followed the directions pretty thoroughly, I did find that one tablespoon of butter for the egg was a bit much. next time I'll just spray with cooking spray. I had the left overs for lunch today, and you know, it was better the second time around! Next time I'll make the rice ahead of time and add some mushrooms.

The Best Banana Bread

This bread rocks! EVERYONE loves it. It is so tasty when it's warm with real butter on it. I've made it several times. In fact, when I go to the grocery store, I look for "ripe" bananas on the sale rack so I can make it again...like tomorrow for example
