Ok, this was my first attempt EVER at cheesecake. It was quite easy, mine did crack, I baked as directed and left it in the oven for 5 hours, it cracked before then, so I didn't think it was necessary to wait any longer, the damage was done. It was my turn to bring dessert to family holidays, so I topped this cake with cherry pie filling, everyone loved it, and no one saw the crack :). It was quite tasty, next time I think I'll add the "bain marie" as one reviewer suggested, also I didn't mix anything by hand as another suggested because the recipe said "do it just the way it reads" and I didn't want to risk it. If the "bain marie" doesn't help next time, I'll go with the "by hand" suggestion. Regardless, the cake was a huge success. Even my niece, the "cheesecake" specialist enjoyed it.
