Baked Salmon II

This was amazing! I followed the recipe exactly, except I didn't have fresh parsley, so I used 1 tsp of dried and I added a 1/2 tsp dill just because I really like dill with salmon. It was so good! I got rave reviews from my husband and BOTH of my kids ate it without complaining (which at this stage of their lives is a big deal). This recipe is easy and gives great results. Try it!

Asian Beef with Snow Peas

This was really good! I doubled the sauce and added in a bell pepper when I put the snow peas in the skillet. Very quick, very versatile, and very good!

Quick and Easy Alfredo Sauce

I have fixed this multiple times and can never get it to thicken and I followed the directions exactly. However, the flavor more than makes up for it being a bit runny. We just eat it with a spoon! :)

Spinach Tomato Tortellini

This is so good and so easy to make! I could not find diced tomatoes with garlic and onions, so I sauteed half an onion with some garlic and then proceeded to add in the diced tomatoes etc. I did double the amount of parmesan cheese. Also, I think I would use a little bit more spinach next time. Thanks for the wonderful recipe!!

Cornbread Salad

I LOVE this recipe! I have made this so many times and it is so GOOD! I use low fat mayo and sour cream to make it healthier. The layers are pretty and if I am making it for company or to take somewhere, then I will take the time to do the layers. Otherwise I just mix everything together at the beginning. The leftovers for this are better than eating it the first time. I have used pinto beans and garbonzo beans (chick peas) and I personally like the chick peas better.

Fish Tacos

This was a really good recipe and I couldn't get enough of the white sauce that you make. I decided not to fry the fish and to broil it instead. (I don't have anything to fry it in and it makes this recipe much healthier.) Anyway, I had a hard time keeping the beer batter on the fish this way. I still really enjoyed these tacos and I will make them again when I get homesick for California. (It's hard to come by a good fish taco over here in Scotland!)

Spicy Slow Cooker Black Bean Soup

Wow! This soup is so good! I served it with sour cream, cheese, and green onions with tortilla chips on the side. Also, this is seriously one of the easiest recipes I have ever made. I did puree the soup at the end of the cooking time with a stick blender and I also added a couple of tablespoons of corn starch to thicken it up. I did not add the diced tomatoes like other reviewers suggested--I didn't think the soup needed it. Also, I did soak my beans overnight and then followed the cooking times exactly and the beans turned out soft just like they should. I will definitely be making this soup again and again. Thanks!

Crustless Spinach Quiche

This is really good. I think next time I will use a little less onion and I will saute the onion with some crushed garlic. Also, I didn't use the Muenster cheese--I just used mozarella with a little sharp cheddar.
