Kentucky Butter Cake

AMAZING!!! My family loved this cake. I made it for Thanksgiving today. At the advice of some of the other reviewers, I creamed the butter and sugar together. Then, I added the salt, baking powder, baking soda and vanilla extract. Then I added 3 of the eggs...one at a time. Then I added the flour. Then I added the 4th egg. The buttermilk was the last ingredient I added. This made the mixing process so much easier. I actually mixed it by hand because I didn't feel like pulling out my electric mixer. I used a large meat fork to poke holes throughout the cake, then poured the butter sauce over it. Again I say...AMAZING!!! My husband has requested that I make this again at Christmas and add pecans to the batter.

Classic Candied Sweet Potatoes

My husband is a huge fan of candied yams...but, I am not. However, I enjoyed this recipe. And, he loved it! I only made a few minor changes. I cubed and boiled my potatoes. I omitted the salt and added 1/4 cup of orange juice to the sugar mixture. Because I boiled them, the potatoes only took about 30 minutes in the oven to finish. Will definitely make this one again, and again, and again...

Country Style Green Beans with Red Potatoes

I think it needed more seasoning. I tasted it as it cooked. And, I ended up adding more pepper, seasoning salt and a tad bit of cayenne pepper, for a smidgen of spiciness. We don't eat pork, and I didn't have any smoked turkey parts. So, I added some chicken bouillon cubes to the water. It tasted good. Also, I used fresh ingredients (potatoes, beans, garlic cloves, onion), since I'm trying to get away from cooking with jarred/canned/processed foods. Overall, it was a good recipe. I'm adding it to my repertoire and look forward to making it again.

Chicken Marsala

My husband (who is not a big fan of mushrooms or Italian food, in general) absolutely LOVED this dish. I took several notes from previous reviewers and made a few changes. I completely omitted the Sherry (didn't see a need for it alongside the Marsala). Added 1/2 teaspoon garlic powder and lessened the salt to 1/4 teaspoon. Increased the Marsala wine to 1 cup and mixed it with 1 can of cream of mushroom soup to thicken the sauce (to go over my pasta). After browning the chicken, I removed it from the skillet and sauteed the mushrooms and a couple of gloves of minced garlic, and then returned the chicken to the skillet to simmer. If you want a milder alcohol taste, try adding 1-2 tablespoons of chicken broth. It helped. And, it turned out delicious!!!

Slow Cooker Chicken and Dumplings

Added carrots, celery, onions, seasonings. Used one 12 oz can of Pillsbury biscuits to make the dumplings. Also used chicken broth in place of the water. Next time, I would only use one 5-6 oz can of biscuits, because there were too many dumplings for our taste. Also, I think I would add additional veggies, like corn and/or peas.

Takeout Burritos

I thought these turned out pretty good. But, my husband wasn't a big fan (he's not a big fan of Mexican food anyway). I did have to alter the recipe quite a bit though. I omitted the cilantro, because I knew he wouldn't like it. I used Tyson frozen chicken and added poultry seasoning for flavor. I couldn't find the Old El Paso seasoned beans at my local grocery store. So, I used regular black beans and added burrito seasoning to them while they were cooking. Overall, it was good. And, I would make it again (when he's not home).

Oven Fried Chicken Wings

I cut out a little of the cheese, because my husband isn't a big cheese fan. I added seasoning to suit our taste, which was quite a bit more than the recipe called for. I ended up cooking the wings for about 20 minutes on each side. And, they came out great. I know that a lot of reviewers have said they weren't crispy enough. But, mine came out nice and crispy (considering they weren't actually fried). I would definitely make these again. Thanks, Lisa!

Peppermint Cookies

I'm not a big sugar cookie fan. But, I got wonderful reviews from the people I made these for. To me, they were a little undersweetened. But, my opinion seems to be the minority. Sprinkling the tops with candy canes did prove to be a tad messy. But, cleaning the baked candy canes off of the cookie sheets was fairly simple to do with a cookie scraper. I would make these again for holiday gatherings.

Apple Pie by Grandma Ople

I have made this pie quite a few times now, but I've never reviewed it before. Every time I make it, it gets RAVE REVIEWS. And everyone asks me to make it over and over again (because they're afraid they won't be able to make it as well themselves). I don't change anything about the recipe. Its' great just the way it is!

Mini Pineapple Upside-Down Cakes

I made this recipe for my Mother's Day celebration today, and all the ladies loved it! It gets a little messy when you invert the cakes after baking, because the pineapple juice leaks. But the taste was delicious. It was light and not overly sweet. I put the cherries in the sugar mixture before baking, like I would with a regular sized upside down cake. I am definitely adding this to my recipe book.

Mel's Magnificent Chocolate Chip Cookies

This recipe was bland. After reading the reviews, I was expecting a much more tasty cookie. But this is just a basic chocolate chip cookie. There's no "WOW factor." I've found much better on this site. And unfortunately, I won't be making this one again.

Lemon Sugar Tea Cookies

My sweetie LOVES the taste of lemon. So I've been looking for the perfect lemon cookie recipe. This one just may be it. I made these cookies for a cookie exchange at work. And they were the biggest hit of all! I did make one change. Because we love lemon so much, I added extra lemon extract AND some lemon juice (to taste). I don't think this made the cookies too sweet (as some reviewers have said). You just have to flavor the cookies to match the taste you're after.
