Simple Country Ribs

This was delicious. I finished them under the broiler since our grill is out of commission, and they were extremely tasty. And with pork spareribs on sale at the grocery store it was an inexpensive meal! Great bang for the buck.

Lentil Soup with Lemon

Delicious--this made a wonderful Christmas Eve dinner, with a salad and dinner rolls. I doubled the recipe and had enough for five adults plus some to freeze for later. Really delicious and satisfying.

Baked Tuna 'Crab' Cakes

I really like this recipe--it is super flexible and very forgiving! I use panko crumbs, exclude the jalapeno (husband not a fan), use regular cottage cheese and sour cream, substitute lemon juice for lime, and when I didn't have a zucchini I used frozen spinach. I use a couple of big spoons to form the patties and then flatten them a bit on the baking sheet and skip the cornmeal. They make a tasty and easy meal, with plenty left over for lunch the next day. I like to mix a little sour cream with curry powder as a sauce for mine; my husband likes his with ketchup. Ketchup?!? Ketchup. But that's part of the flexibility I like with this recipe--satisfies both of our tastes with no extra effort.

Ricotta Gnocchi

I didn't make the sauce, only the little dumplings, but I was very, very happy with how they turned out, and pleasantly surprised at how easy they were to make. I sprinkled a cutting board with flour and spooned about a handful of the dough on and rolled small batches, then tossed the dumplings into a bowl with a little more flour and tossed them around a bit to make sure they were coated so they wouldn't stick to each other. Cooked for about three minutes and used a jarred sauce; delicious and filling!

Baked Custard for Two

Incredibly simple and satisfyingly delicious. Followed recipe exactly (with the exception of the nutmeg--not a fan) and it turned out perfect. It's very liquidy-looking after 35 minutes in the oven, but based on other reviews here I took it out at the appointed time. Even after some time in the fridge it still seemed quite jiggly, but it was actually just perfect, with no excess liquid. We are brand-new empty nesters and custard for two is just perfect for us.

Pesto Cheesy Chicken Rolls

Deeeeeelicious. It's going into my list of go-to recipes. I added egg wash and bread crumbs, and used shredded mozzarella and jarred pesto. I added a spoonful of spaghetti sauce to the cheese and pesto before rolling up. No need to use a toothpick; they stayed together just fine. About ten minutes before taking out of the oven I spooned more spaghetti sauce over the chicken and sprinkled more mozzarella over the top. Really tasty meal for not too much work; the results far exceed the effort.

Hearty Turkey Stew with Vegetables

I didn't have all of the ingredients on hand but still was able to throw this together with very little fuss. I had some frozen chicken tenderloins, which I used in place of the turkey, and how I ended up without any chicken broth in the cupboard I don't know but I used water and white wine instead and it tasted delicious.

Easy French Dip Sandwiches

So incredibly quick and easy--this is a perfect workday dinner for my family. My picky son said, "Whoa...this is really good!" and my husband didn't say anything because he was busy eating the one leftover sandwich. Tastes great!

Lemon Cream Pasta with Chicken

Tasty! Easy! And the whole family enjoyed it. I had to improvise, not having any cream (I made a roux and it worked just fine)...and I was a teensy bit short on lemon juice and supplemented with lime juice...and I also didn't cook any chicken, I had a couple of leftover pieces which I chopped up and dumped in at the end...and I plopped a handful of frozen peas, too... I'm looking forward to trying the real recipe--the "worked all day and didn't have time to go to the store" version was very well-received and the proper preparation can only make it even better.

Yummy! Makes a ton--next time I'll probably cut in half, as there are only three of us and it's more than we can eat in a couple of days. Also, next time I'll look at the can labels before I open them--instead of grabbing the cannellini and navy beans I grabbed the pinto and black bean cans that were right next to cannellini/navy. Whoops. It was still tasty.

Sweet and Sour Chicken III

Delicious; I used a 20-oz can of pineapple chunks (I love pineapple!) and about half the soy sauce. I used a bag of frozen red and green peppers, which made it really easy (less chopping--I did julienne some baby carrots, though). I also used jarred crushed ginger in place of the powdered.
