Texas Sheet Cake V
I made exactly as directed except used a 9 x 13 pan and let it cook for 5 more minutes. Then, I started the frosting right before taking the cake out. Don't feel that you have to use all of the powered sugar in the frosting. I didn't measure but just used what I though was enough to make it a perfect texture. Probably about 3 cupts. Then I poured it over the cake and spread it around while it was still warm/hot. Yes, I did include the walnuts in the frosting! Great recipe!! Makes a lot and very rich but honestly didn't take much longer to put together than a box cake and much better flavor!

Cajun Crab Soup
Not sure what I was expecting but this didn't really meet my expectations. I followed the recipe, but the soup didn't seem to have much flavor and for me, the corn seemed out of place. I guess that I was looking for a creamier type of soup without the crunch of corn. Also, the soup was too thin and watery. I prefer a little more thickness in a cream soup.

Vietnamese Tofu Salad
This is a great recipe. I used extra firm tofu and felt it held up well. I pressed it before cooking to eliminate the extra water. The salad went together quickly, the most time consuming part is getting the tofu ready. The taste is great - fresh, spicy, and sweet. I did add the peanuts last so that they would retain some crunch. Thanks!!
