Like others I made a few modifications to fit what I had on hand: 2 # boneless pork loin-cubed, low-fat coconut milk, 1 small can each tomato sauce and paste. Plus I reduced sugar to 2 Tbs, cooked in a crock-pot on low for 10 hours, used a whole onion and stirred in a defrosted large bag of frozen baby peas just before we ate. Wonderful!
Delightful color, flavor and everyone had seconds. A keeper recipe, easy and quick and with the kids starting the rice cooker for me (sweet, short grain organic brown rice, yum), dinner was ready when I walked through the door. The changes turned a great entrée into a wonderful one dish meal followed by fresh honeydew melon for desert
