Beef Brisket with Chipotle Tomatillo Sauce

I thought ( and so did my hubby and his friend, who are both foodies) that this was great!! I used a chuck roast instead of a brisket because it was on sale, and I cooked it in my crock pot. I did sautee the onions and garlic first, and seasoned and seared the meat as well before putting it in my crockpot on top of a layer of thick sliced potatoes and onions (you can remove them later if you want, but we kept it in the with shredded meat and it was awesome). I blended all of the ingredients following the recipe exactly except that i used 2 cans of tomatillo sauce instead of whole tomatillos and also i used dos equis amber to replace the water ( you could also use beef broth too, which I did add a bit of as well). Cooked for 5-6 hours. We made home made corn tortillas and black beans and rice. Finished off the rest of the Dos Equis...Awesome dinner!!! I will definately be making this again!!

Too Much Chocolate Cake

I have been making this recipe for quite a while now, it is definately my go to chocolate cake. The only real addition that I make is that I always substitute coffee for the water, it gives a nice rich flavor to the chocolate. Also, I sometimes use different kinds of chocolate, like grating German chocolate into the batter as well as the chocolate chips, or using dark chocolate and milk chocolate chips.

Raspberry Chocolate Torte

This is delicious, easy and looks great. I made this for a girlfriend's birthday...my group of girlfriends and I LOVE the 'nuts and berries' after dinner drink (vodka, baileys, frangelico and chambord) so, I made it into a cake...I used a dark chocolate cake mix, made it following the directions, but using coffee instead of water and added hazelnut extract. I torted the cakes, and make a frangelico simple syrup that I put into a squirt bottle and squirted all over the cake...i added baileys to the filling and used fresh raspberries and the chambord component...EVERYONE complemented on its looks ( we brought it into a restaurant and other patrons kept ohhinh and ahhing and asking where we had ordered it from!!) and the taste was even better! the whole group ( about 15) loved it!! I will definately be making this again!!

Yummy Quiche

This was great! I have made plenty of different quiches in the past but nothing like this and I am SO glad I found this recipe!! It was a huge hit at my brunch! I finely diced onions and put them in raw with the green chilies, bacon and I used pepperjack cheese for a little extra heat. Also, when I made my egg mixture I put salt, pepper, garlic powder and hot sauce in with 6 eggs and milk. I baked this in a spring form pan and it turned out great!

Marshmallow Fondant

Let me just say that I was nervous making this as I had never made or really even worked that much with fondant...it was SO easy to make, work with and tasted great!I have made this twice now. I use a generous amount of crisco and powdered sugar just knead it until it is like playdoh. The first time I made it, i needed a small amount of a few different colors, so i kneaded the colors in as i needed them. The second time, I took the advice of another reviewer and added the food coloring to the melted marshmallows and it was even quicker! I am so glad I found this recipe!!

BREAKSTONE'S Triple Chocolate Bliss Cake

Okay if I could give this 10 stars I would! I did not make the coolwhip topping stuff (coolwhip is yucky to me) I made these into cupcakes and added to the batter a cup of mini chocolate chips and grated a half a bar of dark chocolate into the batter. They were amazing. Defiantely a go to recipe for me!

Kay's Shortbread

I have made these cookies tons of times and I have used many different flavors of extracts, turned them into thumbprint cookies and filled them with different jams and preserves, etc. and they are always delicious. I always mix them by hand and they are quick and easy! This is my go to shortbread recipe for sure!

Rich Mexican Corn

This was delicious! I am always wanting a side dish with mexican food other than rice and beans and this ( and calabacitas) are my new favorites! I took adivce from a few other reviewers and altered this dish to suit my family's tastes ( we have 2 toddlers, so I can't make anything too spicy) I used most of a small can of green chilis, some diced red bell peppers, onions and garlic to add flavor, and it was so great! I will make this time and time again, and make it super spicy when the kids are not around!

Courtney's Multi-Purpose Mexican Chicken

Just so everyone knows, the cooking time should be adjusted depending on how much chicken you have, it can take as little as 3 hours. Also, you should put a buffer between the chicken and the bottom of the crockpot, I use sliced onion that I pull out later. One last thing- I always use the recipe taco seasoning 1 from this website, rather than a packaged taco mix that has lots of sodium and preservatives in it!

Black Bean Cigars

I made these for a party I had at my house, I used burrito sized tortillas and i cut them into pieces. They were a huge hit, everyone loved them, espically my VEG friends. I made 12 big ones, and there were none left. I will definately be making these again!!

Home Style Macaroni and Cheese

I am looking for a good homestyle mac and cheese recipe, and I thought that with some tweaking, this was pretty good. I used only half of the cream cheese as others did, and I put some sour cream as one reviewer suggested. I wouldn't do that again. The cream cheese is a good addition, but it does make this really bland. So I added nutmeg (which I add to all my bechemel sauces, which is basically what this is)garlic, white and black pepper, onion powder and salt and almost doubled the cheese. My husband and I both agreed that while the flavor was fine, I could have doubled the amount of noodles that I used. There was way too much sauce in my opinion. While this recipe turned out fine after my changes, I think I'll keep looking for the perfect mac and cheese recipe!

Super Easy Slow Cooker Chicken

This is one of those recipes that my husband looks at me like I am crazy while I am throwing it all together, then while he is eating all he can say is "MMMM! This is awesome!" I use my crock pot alot, and this is one of the easiest, best dishes that I have done in a while-it always amazes me how just 4 ingredients thrown in a pot can make such a yummy dinner! I did make a few changes, as usual. I used 2 cans of soup because when I put the cream of chicken& herbs it just didn't look like alot, so I also threw in a cream of chicken & mushroom as well; but to be honest you would probably be fine with just the one can. I would have also seasoned and browned the chicken breasts first but I was pressed for time to get it in the crock pot, but next time I will definately do that. I used bone in chicken breasts,white onion and fresh sliced baby portabella mushrooms;and I also threw in some garlic and additional herbs. My 3 year old is a huge mushroom fan (the kid won't eat a piece of pizza without mushrooms!), so she loved this but everyone else did too! I am always looking for recipes that I can add to my slow cooker meal rotation and this is definately a keeper!!Thanks for the recipe!!

Garlic Chicken Stir Fry

I thought that this was delicious! It was easy to make too! Tasted like the garlic chicken I get at my fav chinese take out place- only better!I omitted the cabbage and green onions (didn't have these on hand) and used broccoli and carrots, snow peas, 1 onion and red bell pepper. I thought that it was a perfect amount of garlic and ginger, but my young kids did think it was a bit too spicy, so next time I'll use a little less. I'll definately make this again!

Baked Scalloped Potatoes

It wasn't that these tasted bad, in fact, they tasted pretty good (after I added garlic, cheese and additional seasonings.) The reason I am only giving these 2 stars is because it took me 2 days to achieve an edible result. The first night, I had a great dinner planned or my hubby and I (kids with the grandparents) of thick cut ribeyes, broccoli and scalloped potatoes, and because of these, we had no starch, well done steaks and cold broccoli...after an hour and a half in the oven,these still were only half cooked at best, and had managed overflow all over my oven. Not one to waste, I put them in the fridge and planned to use them last night for dinner. After 10 mins in the microwave, then another hour and 15 mins in the oven at 375, these were finally edible...( that's right, an incredible total cooking time of almost 3 hours)but for all that, they were defiantely NOT worth it...my potatoes were sliced very thin, so it wasn't that, and my oven tends to cook hotter than other ovens i've had previously, so I am just trying to figure out what went wrong...but I won't be making these again to find out! sorry!

Cake Mix Cookies I

Like the submitter of this recipe, I recieved this recipe from a friend a few days ago, and I just made them for the first time- they are AWESOME!! This recipe is the same as mine, except I add 1 tsp. vanilla. I made a devil's food cake mix with mini choc chips, and peanut butter chips. SO GOOD!! My husband kind of made fun of me making cake mix cookies..."why can't you just make regular choc. chip cookies?" he asked...then ate about 6 of them and made himself sick. ha ha. The beauty of these is that the sky's the limit...next time I am going to use a german choc cake mix, coconut, mini choc chips and walnuts! Yum! great post Nicole!

Slow Cooker Chicken Cacciatore

Wow! I have been searching for a chicken cacciatore recipe that reminded me of my mother's, and this is it! Plus, it's way less work than she did to produce basically the same great taste. I used frozen chicken breasts, a jar of bertolli roasted garlic sauce, then I added tomato paste, and additional garlic and herbs. Close to the end of cooking, I added onions, baby portabellas, green peppers, carrots and zucchini...served over angel hair...SO good, everyone ate silently!! I will most definately be making this again!!

Sour Cream Chicken Enchiladas

These were pretty good. I might make them again, they are easy, but a bit spicy for my young kids. I have developed a recipe for enchiladas suiza that I think is much better than this, but it is also MUCH more time consuming and this tasted relatively close and was easier and quicker...(I make my own home-made roasted tomatillo salsa (with roasted poblanos, jalapenos and garlic), Monterey Jack cheese sauce and slow cook the chicken)But, like I said, these were pretty good and I will probably experiment with the sour cream sauce.

Calabacitas

This was SO yummy! The only thing that I changed was that I didn't use black beans...I thought that I had a can, but I didn't. Next time, I will make sure I do. I kept thinking of all of the great ways you could serve this...as a side dish (which is what I did), or over rice, as taco finning or even veggie enchiladas...I am definately going to experiment with this one!

Beef and Irish Stout Stew

This was SO good! I made it on st. pattys day, and served it over goat cheese colcannon (I sauteed cabbage, onions and bacon, and mixed it together with goat cheese mashed potatoes). I used parsnips and carrots, and added chopped leeks near the end. I will definately make this again!

Vegetable Fried Rice

This is awesome!! The brown sugar and lime juice really make it. I used 1/2 teryaki sauce and 1/2 lite soy sauce and added a little sesame oil. I also added an egg, because I wanted it to be exactly like chinese restaurant friend rice. I also added a little cilantro as well, just because I love it so much! I will defiantely be keeping this as my fried rice recipe!!
