Sweet Potato Pie I
I reduced the butter to 3/8 cup, used half the amount to vanilla and cinnamon, and omitted the nutmeg. It turned out great! My friends loved it. They thought it was light and fluffy and tasted like Chinese egg tarts. Next time I will use 1/4 cup butter and omit the cinnamon, because I like the natural flavour of the sweet potato.
