Banana Streusel Muffins

best banana muffin recipe I have ever made!! I had to use 1/2 a cup of oil with 1/2 cup of sour cream as I ran out of sour cream and I used 5 medium bananas instead of 2 ( I love the rich banana flavor). I baked these for 30 mins and they were fluffy and moist and amazing. I would add more cinnamon and some chocolate chips maybe next time. perfect texture!!

Chocolate Chip Pudding Cookies

My favorite weekday cookie recipe - it is fun playing around with the different pudding and chip combo's and this cookie is always moist and chewy, delecious.

Coconut Cream Pie VI

This is the best dessert I have ever made, hands down. I followed a few suggestions others made and doubled the corn starch and coconut in the filling and then added whipped cream and toasted coconut to the top. I also skipped the traditional pie crust and made a graham cracker crust instead - this was AMAING!!!! Everyone I fed it to loved it and it will be my new "go to" dessert. yum

Crawfish Etouffee IV

My hubby said this was delecious and I thought so at first too - but I wasn't so sure about it by the time I had finished. I altered the recipe slightly and adapted it for the crockpot - I used butter in with the ingredients instead of margarine and used shrimp instead of crawfish. I also added diced chicken breasts and a can of clams. It tasted a tad too seafoody for my tastes and next time, I will skip the clams. I also think it needed more spices or something as it was lacking wow factor - perhaps some cajun spice next time will do the trick. I had even tripled the garlic in this recipe and added frank's red to it - still a bit bland. This has potential though, just needs more tweaking.

Slow Cooker Manly Stew

honestly, the best stew I have ever tasted - I used two cans of mushroom soup instead of one and used a pack of regular onion soup mix as Superstore had run out of beef onion. I added a can of drained mushrooms and some peas and served it over garlic mashed potatoes with dinner rolls on the side. The perfect meal for a rainy night at home.

Chicago Dip

my first attempt at a spinach dip for an appetizer party. I altered it slightly by adding 1/2 cup of cream cheese to the sour cream and mayo. It was awesome, esp. when we warmed it up the next day

Potato Salad I

a simple, classic potato salad - I skipped the relish and mustard (personal preference) and added extra salt. It was fabulous - nothing fancy , just classic. perfect.

Chicken Stir-Fry

I did not enjoy this stir fry whatsoever. I used chicken broth instead of the water and bouillon and tripled the spices to try and get more flavor into it - it was still bland and unimpressive. I will definitely not be using this one again.

Easy Lasagna III

This was my first attempt at a lasagna and it turned out incredible!! It was a little soupy but the taste was amazing. My hubby and I loved this lasagna and I will probably never try another recipe now that I have found this one.

Juicy Roasted Chicken

Juiciest chicken I have ever had. I didn't add the celery but I did stick garlic and lemon into the cavity and added garlic salt and paprika to the skin. It took exactly 90 mins for my chicken to reach 180 and I let it sit in the foil for 20 mins. It was the most delecious chicken I have had.

Chocolate Strawberries

I dipped my strawberries halfways in semi sweet baker's chocolate and let them harden on wax paper in the fridge (only took about 15 mins) - they are absolutely delecious and very pretty to look at (half is chocolate and the other half is the red of the strawberry)!!!! I am taking them to a dinner party tonight and am very very pleased.

yuck. I doubled the sugar, peanut butter and banana and still found them rather bland. They were also very dense and just not at all appealing. I will definitely not make these again.

Tzatziki Sauce I

Absolutely delecious, it was way too garlicky at first so I just diluted it with extra yogurt and lemon juice and then it was perfect. It was just like the tzatziki sauce they use at Opa Souvlaki in west edmonton mall. yummy.

Baked Potato Soup I

This soup was flavorful enough but the consistency of the soup was just too strange for me to fully enjoy it. I used only 1/4 cup of flour but next time I would omit the flour altogether and I also used bacon grease in place of margarine to add more flavour which I think worked but I wouldn't do it again. I used six cups of milk and one can of chicken broth. I will be trying a different recipe next time as I was very disappointed in the texture.
