Breaded Chicken Fingers

These are wonderful! The whole family loves them! By the way, for those wanting to make it low fat... DON'T omit the buttermilk! Buttermilk itself has a very low fat content and it adds a depth of flavor that skim milk can't hold a candle to! You won't be sorry and neither will your waistline!

Texas Chocolate Frosting

Middle Eastern Rice with Black Beans and Chickpeas

This was bean overkill! That being said, it had a really good flavor the hubby and I loved. Our kids were another story, two out of three declared war while it was cooking and all of them ended up eating PB&J for dinner. Next time I make it, and I will, I will only use one can of beans, but as the description states, the add-ins are endless and I'll use my imagination.

My Chili

It was good and quick in a pinch. I think that it was a little sweet for me. My husband thinks that it was the tomatoes. It made a TON and I froze half for the next rainy day we have. I'll probably make it again.

Spaghetti Carbonara II

It was good, all but one kid loved it. Something happened though that there was almost no sauce, it was completely absorbed by the pasta. More likely a cook's mistake that recipe. We will try it again but suing pancetta, peas, and cherry tomatoes. It needed a little extra umph.

Good Old Fashioned Pancakes

OMG! These are the best pancakes I have ever made at home! They taste like they came from a diner! I tripped out on how much they puffed up when they were flipped. Definately a keeper! Thank you so much for this one!!

Baked Chicken Nuggets

My kids loved it and so do my husband and I. I omitteed the butter and used 1/2 cup of milk with 1 1/2 - 2 tsp of white vinegar (let it sit for five mintues to "set up" a bit). I also followed other reviews that suggested baking them on a rack at 400 for 15 min then broiling for 5, they came out cripsy on both sides! Because of the Italian seasoning (which is not that overwhelming by the way) I gave my family some leftover pizza sauce to dip it in. It was a hit! Thanks for the great recipe!

Broccoli Chicken Casserole I

I'm sorry but we just didn't like this at all. I LOVE broccoli, but there was just something about this casserole that I didn't really like. My husband didn't like the topping, and my kids (2 out of 3) wouldn't even touch it.

Cottage Cheese Roast

Freakin' awesome! We're trying to live a little healthier and save a few $$ by eating one vegetarian meal a week. My husband was revolted at first when I told him what was in it, so much so that he decided he would just skip dinner the night I made this. However, when he saw how much the kids dug it, he tried it was shocked at how much it really tastes like meatloaf. He even asked me if I made meatloaf and was just kidding about the cottage cheese roast. My carnivourous buch loved it!

Slow Cooker Chicken Stroganoff

Fantabulous! This was SUPER easy and pleased everyone from 22 mo to 34 yrs! I think that everyone had seconds. I did make a few simple changes, I used reduced fat cream cheese and reduced fat cream of chicken soup. I also used chicken tenders instead of breasts. Pretty darn good, and it didn't taste a bit like "low-fat" typically does. 2 thumbs way up! *** Revised: After making this a few times my family and I came to the conclusion that we needed to make it more "stroganoff"-like, so we used 4 oz of RF cream cheese and 4 oz of RF sour cream. Delish!

BBQ Pork for Sandwiches

By far and away the BEST BBQ pork sandwiches ever! My husband has been a cook (and now manager) of a BBQ resturant here in Texas and this blows their recipe out of the water. Sweet Baby Ray's is the best BBQ to use with this recipe too.

Chocolate Chocolate Chip Nut Muffins

I just made these this morning and they are wonderful! I did make a few adjustments however. I substituted whole wheat flour for AP, omitted the nuts, used mini chocolate chips. I also substituted 2 tbsp of pumpkin puree for the oil, this not only cuts the fat almost completely out but helps the batter to have more body. It made 17 good sized muffins.

Banana Crumb Muffins

I made these muffins for breakfast today and everyone loved them! I did make quite a few alterations, to make them healthier, and they still turned our great. I made the following substitutions: pumpkin puree for the butter, apple juice concentrate for the white sugar, splenda brown sugar mix instead of plain brown sugar, whole wheat flour instead of AP (added 1/2 cup too) and I also added 1 tsp of vanilla and a 1/2 cup chopped dried cherries. They are not only REALLY low in fat, but also in refined sugar!

Easy Morning Glory Muffins

I used to work at a "From Scratch" Bakery and my favorite goodie was a muffin called Glorious Morning" and this is almost identical. I took the suggestion of another reviewer and replaced the oil with pumpkin puree and because I couldn't find unsweetened coconut I used sweetened and replaced 1/4 cup of sugar with Splenda and used whole wheat flour in place of AP. These muffins are dense, chewy and moist. Heaven!!!! I plan to make a big batch and freeze them so that I always have some on hand, perfect for those morning when there's no time to eat!

Sweet and Sour Chicken I

This recipe is awesome! Other than being time consuming, it was wonderful. Even my picky two-year-old, Princess Mac&Cheese,loved it. Next time I'll make sure that I have plenty of time and an extra set of hands. Thanks for the wonderful take-out replacement!

Skillet Chicken Cordon Bleu

This was so easy to throw together after soccer practice tonight!!! Even my picky two year old loved it. Judging from the way my bunch gobbled it down, it will be a repeater in our house. Tip: Use white grape juice if you don't have any wine on hand.
