Pollo Fajitas

I have made this chicken twice. The first time I did it I did it exactly like recipe said. The second time I cooked it in the oven. I did not cut the chicken into strips. I used chicken breasts. I doubled the recipe and I marinated them for about 6 hours. Then I put them on baking dishes, I sliced onions and red peppers. I placed taht right on top of the chicken. I put them in the oven for about 50 minutes and they came out really good. My dinner guests where raving about how good it was.

Mexican Turkey Burgers

This came out really good. I made it with over fries (a recipe I got from this website too). The salsa I bought thou was Mexican salsa and it had a little mild spice. The came it a great flavor.

Chicken Florentine Casserole

This came out really good. I did not put spinach in the dish though. I bought two cans of greens beans mixed with potatoes. Since my husband is not to fond of spinach I decided to put another vegetable in it. Also I did not bother to put in the mushrooms. I enjoyed it.

Erin's Indonesian Chicken

I did a little bit of change with this one. First I did not make white rice. I made yellow vegetable rice. I put an envelope of sazon (make sure you buy the one with coriander and annatto) and I put frozen veggies in with the rice. It all cooks together. It comes out really good. As for the chicken I cooked it first and I seasoned it with Adobo. Once the chicken was cook I mixed all the ingredients to make the sauce. Once the sauce was cooking for a bit I put in all the chicken in the sauce and cooked it. I let the chicken cook in the sauce covered for about 10 minutes. I also used beef booth since that is what I had on hand. It all come out really good. I did not use the green beans too since I made vegetable rice. Also I used a teaspoon of chilli powder because I could not find Chilli paste. I would defiantly make this one again.

Bombay Chicken and Rice

I did this recipe really different. I decided to just make the rice and forget about the chicken. I did not put the rice in the over either. What I did was I took 2 cups of uncooked rice and added the water in it. In the water I put the teaspoon of onion powder, 4 teaspoons of Curry powder and ½ teaspoon of paprika and a teaspoon of olive oil. Mixed it up and let it cook. My husband is half Indian and he loved the rice. He asked of is again just this weekend.

Jiffy Casserole

My husband liked this casserole but he had one complaint. The potatoes on the top of the dish where not cooked. I don't understand how the top layer of potatoes where not cooked and the bottoms where.

Impossible Garden Pie

This was so good. I was having company over and I did not want to make the regular thing like rice with chicken. So I made the chicken and this dish. Everyone kept on saying how good it was. They loved it. They all told me to make it for Thanksgiving. I think I will.

Rich Pasta for the Poor Kitchen

This pasta was really good. I am always looking for differnet pasta recipes because my husband does not like tomato sauce. So I have to look for other things. I am always finding pasta with heavy cream (those are good) but I wanted to change. This was good. We enjoyed it.

Pistachio Crusted Chicken

I really liked this recipe but I did not use Pistachio's. I used cashews. I only found pistachios with the shell and I did not feel like cracking the shell and then chopping it so I used cashews which in my opinion was just as good.

Herbed Sweet 'n' Sour Chicken

Chicken Milano

I am not sure what I did wrong. I followed the recipe as much as possible. The only thing I did different was that I cooked the chicken and then added all the stuff into it. I did not use three pots. I did that because chicken seasoned with only salt and pepper taste like nothing. I have to say putting everything with the chicken gave the chicken a good flavor but the sauce never got thicke. It was like a soup. My husband liked it but he asked me if we where eating chicken noddle soup. In all the I would probably make it again but just the chicken with the sauce since at the end there was hardly no sauce and it never got thicke. Maybe I should have used corn starch.

Fried Rice Restaurant Style

Very good rice. Of course it did not taste just like the resturants fried rice but it was just as good. The only thing I did different was that I used mixed frozen vegetables, canned mushrooms and 1 clove of garlic. It came out good.

Chicken and Green Bean Casserole

This recipe was pretty good. I am not to fond of mayo so I do not put the full amount that was suggested and it still tasted good. It came out creamy and that was my husbands favorite part.
