Excellent recipe! I used 2 cups rolled barley flakes for the oats (son has allergy) and toasted them with 1 cup coconut for 5 minutes at 350F. If you were going to use old-fashioned oats, I think this would help too. I also used 2 cups rice crispies, 1 cup chopped almonds and 1 cup chopped cashews.
I put it in a jelly roll pan lined with buttered parchment and then placed a sheet of waxed paper on top and used a rolling pin to get them pressed out flat and even. Then I removed the waxed paper and baked. The bars ended up being about 1/2 inch thick. You could also do this in the 9 x 13 pan for thicker bars. Cut them while still warm. Wonderful flavor and held together well. I will make again for sure!
