Banana Oat Muffins

These are absolutely amazing! I only made two modifications because I had to otherwise I would have stuck with the exact recipe. I was out of butter and all purpose flour so I used Extra Virgin Coconut oil and whole wheat flour. Amazing! I will make them again.

Roasted Pork Loin

Definitely take out of the oven when it reaches 145 degrees. It will continue to cook while it rests and this ensures that you'll have the most moist and tender pork possible.

Oven Fried Parmesan Chicken

My Mom's Swiss Steak

This was absolutely fantastic! My husband raved about it and my picky children gobbled it right up. I will definitely make this again. I seasoned the steak with all purpose seasoning and dredged it in flour before browning it. I added a cup of beef broth in place of the water. I omitted the bay leaf because I didn't have any and since I floured the steak the cornstarch wasn't necessary. I also added garlic because I add garlic to just about everything. YUMMY!

Basic Corn Muffins

I used buttermilk and added 1/2 cup chopped corn and they turned out beautifully. I love the jiffy corn muffin mix and I think this is better than that!

Tuscan Soup

This was very good, the only thing I did differently was add the whole can of condensed (fat free) milk because I didn't want to waste the rest. The only thing I'll do differently next time is thicken it a bit with flour or corn starch.

Vegetarian Tortilla Soup

This is the most amazing soup! I added shredded chicken breast and chicken broth and my husband said this is the best soup he's ever had. It will definately be a regular in our house! I also added chopped cilantro along with the avacado and it was GOOD!

Tomato Bisque III

This is wonderful, perfect for a cold day with a grilled cheese sandwich! I found that you don't have to have the tomato paste or the cream and it's just as good. To speed up the cooking time on the veggies I chopped them really fine with my food processer. YUMM!

Spinach and Rice (Spanakorizo)

This is amazing! It's definately on the rotation from now on. The only things I did different was add a minced clove of garlic and cooked it with the lid on. Wonderful!

Sweet Potato Casserole I

This was awesome! I had two thanksgiving dinners to attend and I made a batch for each one. The first I followed the recipe exactly and it was great but a little too sweet so the next batch I cut 1/2 cup of sugar out of the potatoes and 1/4 cup out of the topping and it was perfect. I will definately be making this again!

Crustless Spinach Quiche

Amazing! I only added one cup of cheese to cut the fat and I used sharp cheddar because that is all I had. I also added mushrooms. My husband and my one year old both loved it too!

Yellow Chess Cake

Gooey Goodness!!! I was nervous while it was baking, I used a dark non-stick pan instead of the glass one the recipe called for. I noticed after 10 minutes of baking the edges were starting to get really brown so I covered the whole dish with foil and baked for 30 more minutes. It was gooey and wonderful, everyone loved it. I'll definately be making this again. If you're expecting a solid bar this isn't the recipe that you want. Also, it's super rich so serving it with vanilla ice cream helps cut the sweetness.
