Fruited Ice Cream
I liked this recipe because it was so much easier than the custard-based ones we usually use -- this took literally two minutes to mix up and toss into the ice cream maker -- and it was really tasty as well. However, it's not quite as good as the more labor-intensive recipes; leftovers stored in the freezer will be a little grainy. Two recommendations: one, half the recipe, because the leftovers don't taste as good as the original portion. Also, puree or mash your berries instead of chopping them. As another reviewer pointed out, the texture of the frozen fruit bits is a bit off-putting. But on the whole this is really worth trying, especially if you want some home-made ice cream at the last minute.

Grandma's Best Ever Sour Cream Lasagna
Not only is this very tasty, it solved a huge problem for me ... my kids hate ricotta and I had pretty much given up serving lasagna at home. While this does not have a completely tradititional feeling, it is very good, and it's an easy lasagna to make as well. Like many of the other reviewers, the only change I make is to leave out the olives.

Texas Caviar I
This was great! Using half black beans & half black-eyed peas was perfect and tastes much better than some other recipes I saw using all peas. I did fiddle a little based on some other reviews: I did not use tomatoes since family members don't like them; I added corn instead. Kept the seasonings the same except put in red onion (for some color) and used a couple tablespoons of recaito (cilantro base; in ethnic foods aisle) since I had no fresh cilantro on hand. I like using recaito since I find I can use less salad dressing that way & cut down on fat. I will definitely make this again -- maybe today :-).
