Freezer Caramel Drizzle Pie

I just made this for the inlaws the other night. Instead of making a whole pie, I made them in muffin cups. It ended up making just about 36. Because they are so small, I didnt layer the caramel, just drizzled it over the top. They are very sweet, and the hubby and I decided that without the caramel they tasted just like ice cream sandwiches. In such a small size, they take very little time to thaw, so pull them out when you are ready to serve, not half hour before or you will have little puddles!

Peanut Butter Easter Eggs

I just finished making these. Very tasty recipe...did have to add a bit more peanut butter to make the filling stick together. however, as far as being aesthetically pleasing....not so much. I did the first batch egg shaped, the second batch I made into peanut butter cups. I had foil cups, so I just put a dollop of chocolate in, put a ball of chilled filling in, then topped with more chocolate. much neater of a presentation.

Marbled Almond Roca

I used to make candy with my grandma, so I was quite excited to find this recipe. It turned out great( just finished making two batches). I followed the recipe exactly, but I changed one step. Instead of toasting the almonds on a greased sheet, I did them on a foil lined sheet, then I spread the cooled almonds on a greased cookie sheet. they stick to the butter, and didnt skate around on me when I spread the caramel. overall a great recipe find!

Rosemary Turkey Meatloaf

this was decent, however, I cut back on some of the ingredients, and omitted others. I dropped the milk, used just a 1/4 cup of the vinegar, 1/2 cup of fine breadcrumb, and 1/2 cup of rolled oats. 2 cups of either would have been far too much! with the cup of milk and the full portion of vinegar it definately would have been mushy! I also added a second egg. It seemed to stay together nicely.

Aztec Casserole

I have made this recipe twice now...it's actually pretty tasty. I do agree with the addition of taco seasoning to the enchilada sauce. Ive made it with cubed chicken, but also with ground beef as well, both were good. I only needed about 6 tortillas cut into strips. I layered the tortillas, meat, corn and black beans...omitted the sour cream as my hubby wont touch it, sauce, cheese and then repeated. topped with cheese and in the oven for 35 mins. quick, easy and tasty.

Best Ever Caramel Apple Crisp

Overall very tasty recipe, but very watery. Definitely need a bigger pan than 8x8...will make it again, but will cut way down on the water, and mabye cut the crumb topping down by a third as well.
