Gorgonzola Sauce

This was delicious, and so easy and forgiving. I inadvertently turned the burner on too high, and as I was doing other things in the kitchen it began to boil. I thought it would be ruined but it was amazingly delicious - smooth, creamy, decadent. I didn't have green onion so I used about a tbsp of chopped shallot and it was a great substitute. My husband and I both used it on our steaks and baked potatoes. Tastes so gourmet that no one would ever guess it takes just five ingredients and five minutes to prepare.

Red Wine Pork

I followed this recipe exactly and it was amazing. My fiance loved it too. It was so super easy, and very inexpensive. Very gourmet. I will definitely make this again.

Chicken Wild Rice Soup I

This is some seriously yummy soup! The only prep work I did was cook the wild rice, then I just threw all of the ingredients, except the half and half, in a crock pot for several hours. I only added two tbsp. butter, and used only one cup of fat free half and half, but otherwise followed the rest of the ingredients exactly and it was perfect. This soup is so hearty and filling you don't need to serve anything else with it. My boyfriend didn't like it as much as I did, but still enjoyed it and liked the different textures and that it's very healthy - especially when you omit most of the butter.

Cottage Cheese Chicken Enchiladas

This was so good and easy to make. I used a rotisserie chicken from the grocery store to save time. When I got home I realized the taco mix didn't make it home with me, so since I had a 16 oz. jar of enchilada sauce, I mixed 6 oz. of it into the chicken mixture. It was so good (and easy) that I'll do it that way next time. I mixed all of the filling ingredients together, again to save time. Since I used some of the extra sauce I had intended to use for the top as other reviewers suggested, I stirred a little sour cream into it to stretch it a bit. I topped the whole thing with sliced olives and fresh cilantro when it came out of the oven just as a matter of taste preference. This is my new forever chicken enchilada recipe.

Spaghetti Squash I

This was so good. Very healthy and easy to prepare. I followed the recipe exactly except used a sun dried tomato-basil flavored feta and burgundy olives. Delicious! My squash took about 60 minutes to cook, but it was really big. Will make again.

Mexican Cucumber Salad

Awesome salad. I didn't have red pepper flakes so I used a teaspoon of powder and it was just fine, definitely spicy enough. I used fresh cilantro and mixed all of the spice ingredients with the vinegar before pouring on the veggies. It was the perfect side for shrimp enchiladas.

Chicken Enchiladas V

I made this recipe before exactly as given and it was wonderful. Last night I tried it with shrimp instead of chicken and substituted the cream of chicken soup with 98% fat free cream of mushroom and it was fabulous! I sauted the shrimp with the onion and chili powder and did everything else the same. Will definitely make again!

Veggie Lasagna

This is an awesome, high protein veggie meal. I made it for dinner guests and they loved it, and my husband ate almost half of it in one sitting. I think it's almost better heated up the next day. I followed the recipe exactly and it turned out great. Adding corn does seem a little weird, but it is actually really good in this recipe. I've made this twice and the first time I made it I prepared it the night before so I could just pop it in the oven the next day, and it turned out perfect.

Angel Chicken Pasta

This is the most awesome tasting and easy recipe! I don't eat chicken (vegetarian), but whenever I serve it at dinner parties or just to my husband, everyone absolutely raves about it. I've sampled the sauce and it's really the perfect pasta sauce. I suggest buy the best organic chicken you can find. According to my husband it makes this already wonderful recipe even better. Be sure to double the sauce - you'll be glad you did.

Double-Cheese Meat Loaf

This recipe was incredibly good. I used all ground beef instead of a mixure with pork and veal (less fat!) and it was still great. My husband loved it, too.
