Spicy Garlic Lime Chicken
This was really good, and I'll make it again, but I have to admit I completely changed it by turning it into a crock pot recipe Here's how I changed it: Decreased butter to 1 T Omited Olive Oil Added 1 tsp chopped garlic Added 1 Cup water Added 1 tsp Chicken bouillon Added a splash of Tequila Added 1/2 block of cream cheese (at the END of cooking) I added all ingredients except the cream cheese and cooked on low 6-8 hours. The last 15 minutes I stirred in 1/2 block of cream cheese. Stir the mixture and serve over rice or noodles!

Quick Chicken Enchiladas
I'm sorry, but we really didn't enjoy it, mostly because of the texure. The filling and flavors were good, but the cheese soup mixture made the tortillas sticky and gooey. I might recommend not baking the enchiladas WITH the soup mixture, and instead pouring it on (heated separately) right before serving.

Slow Cooker Dump and Go Cheesy Chicken
I used one can regular cheese soup and one can fiesta nacho cheese soup, which added just the right amount of kick! I think it would have been much too bland without the fiesta nacho soup. I also seasoned the chicken with "Butt Rub" (Google it- this is GREAT stuff!)
