Smothered Pierogies

Thought I would change up my usual recipe. This was a lot more work. I slice partially frozen kielbasa in a pan with a slivered onion and some butter. By then, the pierogies are partially thawed, throw those in, and course chop a tomato and add to pan (seeds, juice, n all).Bring to a slow simmer for about 15 minutes till pierogies are done. Serve with a dollop of sour cream.

Bacon and Tomato Fried Egg Sandwiches with Horseradish Mayo

Have been making these for years. My favorite is to use cheddar and fresh sourdough. On chilly days, after putting the sandwich together, I put it back in the pan to toast the bread and melt the cheese. **UPDATE** 10/21/14 I used the dressing on thin sliced roast beef (warmed) on toasted spiral rye bread, with melted sharp cheddar. Oh em gee!!!! Delish!!

Hot Pizza Dip

I make this a lot, never measure the spices, use whipped cream cheese (or whip to incorporate the spices). I mix half of the cheeses into the cream cheese also. Nuke the chopped pepperoni a few seconds to get rid of the fat. Top with sauce, rest of provolone, any toppings I'm in the mood for, and sprinkle a little fresh parm on top. When whipped it's scoopable.

Oven Fried Chicken II

Was an ok recipe, till I read the amount of oil in the bottom of the pan. Seasoned and breaded almost to the recipe, but with more spices. Then I cover the bottom of a high lipped sheet pan with oil (just barely), put a baking rack in the pan, spray with Pam, then place the chicken on the rack. Baked at 350', flip after 20 minutes, maybe 20 minutes (I bake by smell) later,turn off the oven, flip again - but leave in until all side dishes are done. Serve hot.

Dill Pickle Appetizers

Love this. Usually just roll in ham slices, but have made them with thin sliced marble rye sliced thin from the bakery. Also, serve a mustard dipping sauce. Adjust seasonings in the cream cheese for different types of pickle. I always add garlic powder, though.
