Ratatouille Bake

I had already made some ratatouille when I saw this recipe. I decided to add some extra basil and parsley to my ratatouille to make it more like the recipe. I did use chicken and cheese ravioli instead of just cheese ravioli and added more mozzarella cheese on top to make sure the entire casserole was covered with it. The results were fantastic. Luckily, we have leftovers so we can have some more tomorrow night! This recipe will go into my special file.

Tres Leches Cake

This is a really nice cake. Like some other reviewers, I sweetened the whipped cream with powdered sugar and added a bit of vanilla. Instead of frosting the cake, I just served it with a big dollop of the sweetened whipped cream and some nice strawberries. It looked great and tasted great too. The next day, I drizzled caramel sauce on a dessert plate, put a piece of the cake on top, and added a dollop of cream on the side. It was a nice change but very good too. I put to good use the cup of cream mixture that is discarded from the recipe. I served it over berries. Yum!

Sweet Bacon Crackers

I have made this easy recipe for many years and always gotten rave reviews. To reduce calories and mess, I don't even use any brown sugar and people still love them. I do always cook them on a rack to prevent them from becoming too oily and to prevent oven flare-ups.

The Best Vegetarian Chili in the World

This is a great recipe that my whole family loves. I have used a 28 oz. can of crushed tomatoes instead of the 3 tomatoes and it works out fine. I do not drain the cans of beans to provide enough liquid. I noticed that the author just posted a note saying that there was an error on the tomatoes and it should have been 3 cans of tomatoes not 3 fresh. I suspect that is why I need to keep the beans undrained. I'm sure the extra tomatoes will expand the flavor but I do like it as is. Like others I use 1 tsp. salt instead of 1 Tbsp. I also cheat and use any leftover meat I have (beef, pork or chicken) instead of vegetarian burger crumbs--just chop the meat up.

Split Pea Soup with Rosemary

This soup is the best split pea soup ever. It has a subtle sweetness and the rosemary is not too strong. I have substituted small ham cubes for the bacon at times. When I do, I put about 2 Tbsp. olive oil in the pot and add the ham along with the onion.
