Mini Pineapple Upside-Down Cakes

I altered the recipe but took off on the idea. The little cakes look like alot of work went into them but was really a very quick. I used Supreme Pineapple box cake mix and followed the directions on the box. Then followed the procedure of assembling the cakes. I put the cherry in before baking which was fine. Delicious and attractive. Thanks for the idea.

After-Thanksgiving Turkey Soup

This recipe is a gem! I changed the half and half to regular milk and had omit the celery (because I didn't have any). It was so yummy! I want to make it again. I had used this soup to contribute to Christmas Dinner. We ate some at home and 15 people ate it and there was still alittle left over. I was asked for the recipe by my niece. Love it. It's a keeper.

Healing Cabbage Soup

I had a bag of shredded broccoli and carrots that were pre-packaged for cabbage-less coleslaw. My son had a sore throat and so I decided to make soup instead of coleslaw and looked up this recipe and used my shredded broccoli/carrots in place of the cabbage. It was really good. I omitted s&p because my chicken broth powder which I used more than the recipe called for was already salty. It was good to dip some fresh bread with it. The olive oil was a good coating for his sore throat and of course the nutrients are also healing within themselves. Thanks for the recipe.

Cream of Broccoli Soup I

I LOVE THIS SOUP! My whole family loved it. I ate it for several days afterward. The cheese was a nice additive. I will make this often.

Spinach Quiche

This was better than my old quiche recipe which was pretty good. I did not have spinach so I used frozen chopped brocolli instead- shredded mozarella cheese instead of cheddar and added bits of ham. We ate it very quickly because it was very delicious. Thank you for the recipe. It is a keeper.

Berry Trifle

I made this for a family occasion. This was an easy, delicious, and attractive dessert. I also layered the cake and bluberries and raspberries and blackberries. There were many kids at my party so I omitted any alcohol and it was still delicious. I put a berry on top to top it off. I enjoyed it and so did my guests. I will make this again.

Easy Apple Cider

I liked this recipe. I added a small piece of vanilla bean and orange juice to the cider and cut back just a little on the brown sugar. I had 15 folks over for about 4 hours and they drank most of a large crockpot full. My son who is 7 years old loved it and wants me to keep making it all winter. Thanks for the recipe.

Garlic Butter

I made this garlic butter, then put it on Italian bread slices and froze it. When I needed to use my garlic bread, I pulled it out of the freezer the night before, and broiled it, then sliced it. I liked the taste of the garlic bread better then just drizzling butter or olive oil on it then garlic. It was evenly distributed. The paprika gave it a little extra zing. I did not have italian seasoning so I did not put that in but it was still great.

Freezer Vegetable Soup

This is a great recipe. I wanted to take advantage of tomato harvest season. There is nothing like a fresh tomato. I made this recipe and froze it in small batches. Today, I took three batches out, put it in my Nesco Cooker added water, lentils, rice, sausage (already cooked), a chicken bouillon cube. It is delicious. I hope I can save enough for the winter. I might eat it all before then.

Chocolaty Caramel-Nut Popcorn

Out of this World Yummy! BEWARE! You won't be able to stop eating them once you start. LOL -I altered the recipe and used peanuts instead of almonds. I used plain kernals in the microwave in a paper bag instead of microwave popcorn and made two large bowls of popcorn. I doubled the recipe for the carmel mixture and added more nuts and chocolate. My party guests ate the whole thing. I may make it again this holiday for Christmas presents.

Quick Chicken Pie

I changed the recipe slightly. I added cream of mushroom instead of the other soup and used soy milk instead of milk. I also used frozen peas and corn not thawed and it was fine not thawed first. I had cooked chicken and threw it in my food processor where it diced up the meat a little finer than if I had done it by hand. I liked it finer. I was suprised at how much I actually liked this quick recipe. It was really good. I used Bisquick for the breading. In fact, my husband who does not like chicken pot pie liked it and went back for seconds that evening. My son liked it also. Thank you for the recipe, I will do this recipe again definately.

Freezer Peach Pie Filling

It is genius. I love the concept. I do wish that I had made (as another reviewer wrote) more peaches in a 9-inch pie because it is not enough. Next time, I will add 4 c. of fruit. I also think when I do bake it, I will add a top. As a reviewer mentioned--try it with apples and I have a bag of apples waiting so I think I will. Thank you. Love the idea.

Stephanie's Freezer Spaghetti Sauce

I have been making lots of this spaghetti sauce and freezing it. I did use the sauce once on a boli pizzi and it was out of this world. So I made more of the sauce and froze it. I can't wait to thaw in the winter and have tasty homemade sauce. Thanks for the recipe.

Apple Chutney Chops

I changed the recipe alittle. I made the chutney without golden raisins because I didn't have any. I spread on top of raw pork chops w/out bones and baked for an hour. I liked the apples mixture with the rice and the pork chops came out moist and tasty. I liked it my son did not like the apples.

Zucchini Coconut Loaf

Wow! It is hot out of the oven. I couldn't wait to taste it so I cut it early (cuts better if cooled first) and put butter on a slice and it was out of the world. I used a reviewers recommendation and instead of 1 c. of oil I used 1/2 c oil and 1/2 apple sauce. I also omitted the nuts. It was moist and delicious. It's a keeper. Especially in zucchini season.

Apple Pie Filling

I have an apple tree in the backyard and had heard you could freeze apple pie filling but never had a recipe. When I saw this recipe it was perfect timing. I took the advice of others and reduced the water to 6 cups water to 12 cups apples. In a peach filling recipe on the website, they suggested to freeze the peaches in a foil lined pie plate with foil on top. When it froze, remove it from the plate. Cook in oven at 425 degrees on the bottom rack then lower the temperature. I tried this with this apple pie filling and it was marvelous. I look forward to another apple pie this holiday. Ratatouille

We went to see Ratatouille in the movie theatre and I was not familiar with this dish so I looked it up and cooked it up with this recipe. I loved it. I served it as a main course and believe it made either a hearty side dish or a light dinner. Everyone liked it. Definately to be used during the harvest season. Vegetables must be fresh. This was a great recipe and I will make it again as one of my favorite vegetable meals. Thanks.

Mrs. Sigg's Snickerdoodles

My seven year old son and I made these snickerdoodles together. We loved them. He had fun rolling the dough in a ball and cover in the sugar/cinnamon mixture. He even tucked some extra cinnamon in the center for fun. We decided we would make these again but try some apple in the center. We will let you know how it turns out. Thanks for the recipe. The cookies were so good they disappeared quick.
