Garden Fresh Tomato Soup

great base recipe as written. I did add some milk to the roux to make it more of a cream of tomato soup, and will add more next time to make it even creamier. Also sauteed the onions and garlic to soften them and added some balsamic vinegar as one other suggested. Tasty way to use up garden tomatoes! Served it with grilled cheese and tomato sandwiches. Thanks for the recipe!

Tomato Basil Pasta

Whole family enjoyed this one! Made it with my garden tomatoes. Took other readers' advice and sauteed the onion and garlic first. Next time I'll double the recipe so we have plenty of leftovers for the next day!

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

I spooned about a Tbsp. of cake batter into cupcake liners, then added a teaspoon of brownie batter, then topped with another Tbsp. cake batter, then baked. This prevented the cupcakes from sticking as other readers had problems with. However, while moist, I really found these cupcakes lacked flavor. The white cake was bland, and the chocolate wasn't strong enough to come through. If I make them again, I'll try adding some almond extract to the white cake batter, and perhaps I'll add some melted chocolate to the brownie batter. Sorry, they just didn't do it for me.

Simple Savory Quinoa

Not one complaint from the family on this one! Doubled the mushrooms as mentiioned by other reviewers and used half baby bellas/half regular mushrooms. The mushrooms were fantastic. I used chicken breasts that weren't quite thawed went they went in the oven, and the 45 minutes was perfect for cooking them; very moist. If using completely thawed chicken, I'd cut the cooking time down by 10 minutes to keep them from drying out.

Easy Honey Mustard Mozzarella Chicken

Very sweet. Only 3 of the 5 of us liked it, but it did come out very moist. Did not use the bacon, since I didn't have any, and that might have made the dish less sweet, with the saltiness from the bacon counteracting the honey. Would make again but cut down on the honey and definitely use bacon.

Buckeye Cookies III

Outstanding! Had several people ask for the recpe. "Batter" is crumbly, so it needs to be worked well with warm hands into the balls. Otherwise very easy and extremely good!

These are the most outstanding raspberry cookies EVER! I make a cookie assortment for my family members to give as holiday treats every year, and this one is a favorite! My sister keeps the ones I give to her family all to herself. LOVE them!

Would give it zero stars if I could. Have no idea how everyone managed to get it creamy...the parmesan cheese ended up not blending at all and turned into one big glob. Will not make this again!

Chicken and Gnocchi Soup

loved it! I doubled the recipe and used canned chicken, undrained, in place of the cooked chicken breast. Also subbed 1% milk for half of the half-and-half, so the soup did need a little thickening with cornstarch. Delicious!

Salsa Chicken Rice Casserole

LOVED it! I used medium-hot southwest-style salsa (with the beans and corn) and omitted the chopped onion. Made it first for a friend's family, using a shredded Mexican cheese blend...they said they liked it, so I made it for us a couple nights later using shredded mild and sharp cheddars, as I ran out of the Mexican blend. It was YUMMY! I might try adding some chopped chilies next time for even more kick. Great recipe and very easy!

Stuffed Mexican Peppers

try this with shredded cooked chicken instead of the ground beef and salsa instead of the tomato sauce...you can omit the water and step 1. In a large bowl, mix the chicken, rice (increase to 1 cup), taco seasoning, 1 cup salsa, 1 cup mexican cheese blend, salt, pepper, & garlic powder; omit chili powder and use a can of green chilis, drained, instead. Stuff softened pepper halves, top with additional salsa and bake. You can add more cheese on top the last few minutes of baking. And if your family doesn't like peppers, the filling can be baked as a casserole in a lightly greased baking dish instead and served with crushed tortilla chips. Delicious!

Mexican-Style Goulash

made some adjustments as others recommended: used 2 cans Rotel tomatoes and a can of tomato soup in place of the diced tomatoes and sauce, added some minced garlic, a bit of cumin, and more macaroni. Added more water due to the increase in macaroni. Came out a little too spicy for some, but it was still very good. Just needed to wash it down with some cold milk! Next time I'll only use one can of the Rotel tomatoes. Good recipe!

Beef Nacho Casserole

excellent recipe. I used the sour cream like other reviewers recommended, and I also added a can of green chilis. I used medium hot southwestern style salsa, with corn and black beans, which really added some extra chunkiness and heat.

Actually Delicious Turkey Burgers

I usually don't like turkey burgers, but these were quite good! I followed some others' advice and used some freshly ground Italian spices, about 1/2 tsp, used a whole egg instead of the eggwhites, & added both soy sauce and worcestershire sauce. Since I didn't have any seasoned breadcrumbs, I used panko bread crumbs instead, increasing the amount to about 3/4 cup as well. The red pepper from the Italian spices gave these a nice bite. The recipe made 9 good-sized burgers; I cooked 4 and froze the rest. Thanks for the recipe and tips everyone!

Eggplant Parmesan I

Great recipe! I'm not fond of eggplant, but this was really good & made even better using my homemade tomato sauce. Liked that the eggplant wasn't breaded and then fried before layering into the casserole.
