Date and Nut Bread

I do not have a bread machine but it still turned out perfectly. It's a very moist, tasty bread. All it requires to omit the machine is putting the dry ingredients together, including the dates (I used dried and pitted rather than fresh), and then adding the water/oil/honey/yeast mixture (after the yeast has been activated) to it. I kneaded it for about 10 minutes and then let it rise twice for about an hour each time in our microwave with a cup of boiling water beside it to help it rise. Baked it at 350 for ~35 minutes or so. Great bread! I'll make another batch soon!

Suki's Spinach and Feta Pasta

So good and so easy. A new favorite pasta dish. I made it essentially exactly like the recipe but instead of red pepper flakes I put a half t. of cayenne pepper. I also used bow tie pasta instead of penne because I had it on hand.

Award Winning Soft Chocolate Chip Cookies

This was the best chocolate chip cookie recipe I've ever used and I've tried several. I'm thrilled with the results. Note: I bought vanilla pudding mix in bulk so when I made half the recipe, I used approx. 6 tablespoons and it turned out really well.

Cranberry Spinach Salad

I thought this was excellent. I was skeptical at first but it was very tasty. The tastes of each ingredient compliment one another very well. Sometime I will try adding diced apples to it. Dressing is excellent for lots of other salads too.

Sweet Corn Bread

This corn bread was excellent. Very moist and tasty and didn't fall apart! I took other reviewers advice and doubled the sugar with an extra 1/4 cup using demerara sugar (I prefer its taste to white sugar). I would guess brown sugar might be nice to use too as a partial replacement.

Sean's Falafel and Cucumber Sauce

This was delicious exactly as written. I fried mine in a little oil for about three minutes and then baked them to reduce the fat content/calories, and served it with Peppy's Pita Bread and a cucumber, tomato, red onion salad with mint from this site. Yum!

Broccoli and Sausage Cavatelli

I followed some advice from others and added chopped onions to the sausage while it cooks. I also substituted bowtie pasta for cavatelli because its what I had on hand. This was really good pasta! A great dish for potlucks!

Beautiful Salad

This has become one of our favorite salads. I substituted goat cheese for the feta and it was so good I think I'll stick with the change! Otherwise, everything else about the recipe was followed as written. I served this with Tuna Noodle Casserole from scratch on this site. A very tasty meal!

Chicken Makhani (Indian Butter Chicken)

So good. I marinated the chicken first in some of the yogurt and spices for an hour, but otherwise followed the recipe nearly exactly. I found this recipe a bit too spicy and I even halved the cayenne pepper so I'd say add it gradually and taste with a big mouthful.

Spicy Chicken and Sweet Potato Stew

This was something else! I made it with Sweet Corn Bread (a recipe found here on allrecipes). Great reviews from the family. Serve with cheddar cheese on top or sour cream.

Homemade Black Bean Veggie Burgers

These were delicious and did not fall apart for me. I followed the directions almost entirely but replaced the bread crumbs with quick oats and a few crackers and added about 50% more than it calls for. I topped them with cilantro, avocado, some mayo, and cheese. So yummy.

Thai Cucumber Salad

This is the kind of salad that makes you want to suck the cucumbers to experience all of the taste. It is so good. I did lessen the amount of jalapeños a great deal--I used only half of one and it was plenty hot. Don't skimp on the cilantro. So good.

Marrakesh Vegetable Curry

This was really good stuff...maybe the best Moroccan curry I've had yet. I took other people's advice and nearly doubled most of the spices, except the cayenne, and added a teaspoon of coriander. Served it with couscous.

Butter Bean Burgers

These were so tasty! I trusted the submitter's choice of butter beans and other ingredients and am glad I did. The only changes I made was substituting Ritz crackers for saltines and used over 12 (I lost count) and real garlic for the powder. My first few were really difficult to flip or get off the pan so I covered the pan with a lid the second time around it and seemed to distribute the heat more evenly and seemed to solve the problem. I also followed other reviewers' advice and just kept adding crumbs until it felt like they were the right consistency. I'll be making these again!
