Date and Nut Bread

I do not have a bread machine but it still turned out perfectly. It's a very moist, tasty bread. All it requires to omit the machine is putting the dry ingredients together, including the dates (I used dried and pitted rather than fresh), and then adding the water/oil/honey/yeast mixture (after the yeast has been activated) to it. I kneaded it for about 10 minutes and then let it rise twice for about an hour each time in our microwave with a cup of boiling water beside it to help it rise. Baked it at 350 for ~35 minutes or so. Great bread! I'll make another batch soon!

Curry Pumpkin Soup

This was good, but better with coconut milk as a substitute for the half and half cream, and thai curry paste as a substitute for the curry powder. I used a little more sugar. Next time I will add onions processed in a good processor as suggested by others.

Cranberry Spinach Salad

I thought this was excellent. I was skeptical at first but it was very tasty. The tastes of each ingredient compliment one another very well. Sometime I will try adding diced apples to it. Dressing is excellent for lots of other salads too.

Summer Salad with Cumin-Crusted Salmon

This dish is so exciting! I love the combination of salmon, spices, oranges, beans, cheese, and nuts. It's absolutely delicious. I did not have pine nuts on hand so I substituted roasted almonds. Next time I will definitely add an avocado- I'm convinced that would take it to a whole other level.

Pumpkin Chili

This is delicious. I entered this in a chili contest and won! I added a bit of orange juice (1/4 cup?), a bit more pumpkin, and almost doubled the seasonings. I added 1 t. of cumin, and a sprinkle of ginger too. I love this recipe.

Portobello Mushroom, Fresh Peppers and Goat Cheese Pizza

This was amazing pizza! I think I'll be making this over and over. I used marinated fire roasted red peppers, marinated canned portobella mushrooms, and sauteed a yellow pepper with the garlic. I added a splash a white wine to the peppers, too. I baked the dough for about 5 minutes, then sprinkled it with crushed red pepper, and the toppings as listed. Absolutely divine.

Butter Bean Burgers

These were so tasty! I trusted the submitter's choice of butter beans and other ingredients and am glad I did. The only changes I made was substituting Ritz crackers for saltines and used over 12 (I lost count) and real garlic for the powder. My first few were really difficult to flip or get off the pan so I covered the pan with a lid the second time around it and seemed to distribute the heat more evenly and seemed to solve the problem. I also followed other reviewers' advice and just kept adding crumbs until it felt like they were the right consistency. I'll be making these again!

Beautiful Salad

This has become one of our favorite salads. I substituted goat cheese for the feta and it was so good I think I'll stick with the change! Otherwise, everything else about the recipe was followed as written. I served this with Tuna Noodle Casserole from scratch on this site. A very tasty meal!

Amazing Sun-Dried Tomato Cream Sauce

This sauce was really good with added garlic and some mushrooms. The only problem I had with it was that the sundried tomatoes were a little tough. I might soak them in hot water first next time. Very tasty.

Spicy Chicken and Sweet Potato Stew

This was something else! I made it with Sweet Corn Bread (a recipe found here on allrecipes). Great reviews from the family. Serve with cheddar cheese on top or sour cream.

Scrumptious Strawberry Shortcake

Rather tasteless as it is. Needs vanilla. I gave this recipe four stars instead of three because the strawberries I bought at the supermarket were rather tasteless too, which can't be blamed on the recipe.

Sweet Potato Casserole II

These were soooo good. I halved this recipe and followed it exactly except that I reduced slightly the amount of white sugar, increased the amount of vanilla slightly, and added 1/s tsp of cinnamon, a 1/4 t. of nutmeg and salt each.

Broccoli and Sausage Cavatelli

I followed some advice from others and added chopped onions to the sausage while it cooks. I also substituted bowtie pasta for cavatelli because its what I had on hand. This was really good pasta! A great dish for potlucks!

Tortilla Soup I

This was really good. I followed the instructions nearly exactly. I fried the corn tortillas to make them crispy and topped the soup with cheese. I think it'd be good with cannelloni beans so I might try that next time.

Thai Cucumber Salad

This is the kind of salad that makes you want to suck the cucumbers to experience all of the taste. It is so good. I did lessen the amount of jalapeños a great deal--I used only half of one and it was plenty hot. Don't skimp on the cilantro. So good.

Six Week Bran Muffins

The best. So moist and perfectly sweetened. I substituted most of the white sugar with Turbinado (raw) sugar and yogurt for the buttermilk. I also added all of the bran cereal to the water rather than doing what the recipe says.

Award Winning Soft Chocolate Chip Cookies

This was the best chocolate chip cookie recipe I've ever used and I've tried several. I'm thrilled with the results. Note: I bought vanilla pudding mix in bulk so when I made half the recipe, I used approx. 6 tablespoons and it turned out really well.
