Date and Nut Bread

I do not have a bread machine but it still turned out perfectly. It's a very moist, tasty bread. All it requires to omit the machine is putting the dry ingredients together, including the dates (I used dried and pitted rather than fresh), and then adding the water/oil/honey/yeast mixture (after the yeast has been activated) to it. I kneaded it for about 10 minutes and then let it rise twice for about an hour each time in our microwave with a cup of boiling water beside it to help it rise. Baked it at 350 for ~35 minutes or so. Great bread! I'll make another batch soon!

Spicy Chicken and Sweet Potato Stew

This was something else! I made it with Sweet Corn Bread (a recipe found here on allrecipes). Great reviews from the family. Serve with cheddar cheese on top or sour cream.

Thai Cucumber Salad

This is the kind of salad that makes you want to suck the cucumbers to experience all of the taste. It is so good. I did lessen the amount of jalapeños a great deal--I used only half of one and it was plenty hot. Don't skimp on the cilantro. So good.

Chicken Makhani (Indian Butter Chicken)

So good. I marinated the chicken first in some of the yogurt and spices for an hour, but otherwise followed the recipe nearly exactly. I found this recipe a bit too spicy and I even halved the cayenne pepper so I'd say add it gradually and taste with a big mouthful.

Six Week Bran Muffins

The best. So moist and perfectly sweetened. I substituted most of the white sugar with Turbinado (raw) sugar and yogurt for the buttermilk. I also added all of the bran cereal to the water rather than doing what the recipe says.

Sweet Corn Bread

This corn bread was excellent. Very moist and tasty and didn't fall apart! I took other reviewers advice and doubled the sugar with an extra 1/4 cup using demerara sugar (I prefer its taste to white sugar). I would guess brown sugar might be nice to use too as a partial replacement.

Cranberry Spinach Salad

I thought this was excellent. I was skeptical at first but it was very tasty. The tastes of each ingredient compliment one another very well. Sometime I will try adding diced apples to it. Dressing is excellent for lots of other salads too.

Award Winning Soft Chocolate Chip Cookies

This was the best chocolate chip cookie recipe I've ever used and I've tried several. I'm thrilled with the results. Note: I bought vanilla pudding mix in bulk so when I made half the recipe, I used approx. 6 tablespoons and it turned out really well.

Suki's Spinach and Feta Pasta

So good and so easy. A new favorite pasta dish. I made it essentially exactly like the recipe but instead of red pepper flakes I put a half t. of cayenne pepper. I also used bow tie pasta instead of penne because I had it on hand.

Apple Scones

Not bad, but not great either. More like cake than scones. A plus could be that these have less fat than scones typically do. Not a whole lot of taste.

Quinoa and Black Beans

Peanut Butter Noodles

Very tasty. I could not find Udon noodles, but if I had, I'm sure it would have been even better. I used regular spaghetti noodles. I served it with a simple cucumber salad.

Vegan Bean Taco Filling

This was very tasty and easy. I used refried beans instead of black beans because I had that on hand, but I had to increase the spices a bit. I added a few shakes of garlic powder as well. Excellent with sour cream and salsa, lettuce, and guacamole.

Baked French Fries I

These fries turned out excellent! Very tasty. I didn't have garlic powder so I chopped up some fresh garlic (one large clove), and substituted onion powder with steak seasoning (reduced it to one teaspoon). Yum!
