Chili Sauce

Reviewed: Jan. 29, 2011
This can be a good recipe with a LOT of additions. It was far too sweet even though I only added 1 tbs of brown sugar. I also ended up adding garlic powder, onion powder, chili powder, red pepper flakes, salt, coarse black pepper, soy sauce and a dash of hot pepper sauce. NOW it tastes like what I think chili sauce should taste like. With these additions I will continue to make it.

White Cheese Chicken Lasagna

Reviewed: Jan. 25, 2011
uhh, YUM. This was so good, everyone in the family loved it. Minor changes - I used homemade lasagna noodles, steamed fresh spinach, and I added pureed zucchini and broccoli. Didn't have any ricotta so I used cottage cheese. I mixed the spinach, zucchini and broccoli with the cottage cheese to make layering easier. I chose not to cook my noodles ahead of time so I added 1/2 c of water to the sauce, but they didn't cook that great in the white sauce (I've had great success not cooking them ahead of time for traditional red sauce lasagna). Next time I'll cook them ahead of time for sure! Will be making this again.

Cottage Cheese Chicken Enchiladas

Reviewed: Jan. 25, 2011
this was really, really good. I went all the way and used homemade taco seasoning, homemade enchilada sauce and homemade tortillas. Insanely good. My only complaint is that I did NOT like the smell of it being reheated, so I wouldn't eat it (but my husband gobbled it up). But that's just my own weirdness coming out. ;)

Chicken Tortilla Soup I

Reviewed: Jan. 25, 2011
this soup is DELICIOUS! I make this at least 2x a month. The whole family loves it, which is a huge bonus. My only change is I add more black beans, 2 cups of corn instead of one (in place of the hominy), and I use homemade chicken stock instead of canned broth (which means an adjustment with the water, I usually skip it all together). It is sooooo good!

German Lentil Soup

Reviewed: Jan. 25, 2011
it had decent flavor, but it was way too thick and needed a lot more liquid. And I love thick soups!

Bubba's Jambalaya

Reviewed: Dec. 23, 2010
My husband and I absolutely love jambalaya. We used to buy the boxed mix, and I've recently been obsessed with making these things myself instead to control the ingredients. I admit, I had doubts on how this would turn out. I shouldn't have, because it is FANTASTIC. I did make a few changes, I omitted the celery and replaced the green bell pepper with a red. I also did not add ham or shrimp. My husband and I both were just so in love with how this turned out, it's a regular staple in our home!

Brooke's Best Bombshell Brownies

Reviewed: Feb. 21, 2010
I'd really give this recipe 3.5 stars. These brownies were pretty good straight from the oven, though they are EXTREMELY sweet. I chose to keep the amount of sugar (against my better judgement) based on other reviews, but would reduce it if I made these again. The only thing keeping me from doing this is the fact that the day after they were absolutely nothing like the yummy brownies I took from the oven the night before. They hardened very quickly, and seeing as we don't eat a whole tray/pan in one sitting....kind of a big deal.

Home Style Macaroni and Cheese

Reviewed: Nov. 6, 2008
I don't know...I made this based on the suggestions from others here and all I can say is there IS such a thing as too much cheese. It was ok the first night, but I could only eat a few bites and I didn't even want to look at it the next night. I'm giving it four stars because my husband went nuts over it. I'll probably make this again, this time adding less cheese (sticking more to the original recipe suggestion) and only cheddar instead of the other additional cheeses as suggested by others.

Pumpkin Tea Bread

Reviewed: Nov. 6, 2008
mmmmm outstanding. I made a quadruple batch, as I made this recipe to purposefully get rid of some leftover tangerines I had, and was planning on freezing most of them. I changed the ingredients to fit what I had on hand, being such a large batch. I only used a cup and half of sugar, and about 2 cups of brown sugar, which was significantly less sugar than the recipe calls for. Even without most of the sugar, the bread was incredible. Not sweet, but so flavorful. My daughters loved them, a huge bonus. We even eat them for dessert and spread some cream cheese frosting to make it more "dessert-y". Oh sooooo good.

Peach Muffins

Reviewed: Oct. 16, 2008
oh, yum! I made these with nectarines that were going to go bad if I didn't use them quick. I followed the recipe and used the exact ingredients. I ended up essentially turning my nectarines into a puree, as I don't like large chunks of fruit in my muffins. These were so good. I used 2.5 cups of nectarines as that's what I ended up with, and they came out so moist. Everyone in the house liked them, which makes this an automatic keeper in my book! I will definitely be making these again.

Delicious Ham and Potato Soup

Reviewed: Aug. 28, 2008
This was so very good. I wasn't expecting it to taste so wonderful! And I love that this recipe doesn't use heavy cream, so I can cut the calories and fat by using skim milk. I added corn and carrots to this. I'm wondering how this will taste with some finely chopped spinach. MMM. I can't wait to try this again!

Basic Ham and Bean Soup

Reviewed: Aug. 13, 2008
Not quite what I expected. I was disappointed. I made a double batch too. The beans seemed to turn mushy, even though I cooked this as instructed. What I'm doing to compensate for it's thickness is adding water before reheating and it seems to help. Despite all of the seasonings I added, it still lacked some flavor and I found myself having to add more directly to my bowl. I'll keep looking for another ham and bean soup recipe.

Carrot Cake III

Reviewed: Aug. 13, 2008
This cake is amazing. I made it because I have a ton of carrots to use up, even though I've never really cared for carrot cake before. I made a few changes, I used some applesauce in place of some of the oil as other reviewers suggested, and I used 1 c of brown sugar in place of 1 c of regular sugar. Made the frosting without the nuts, but kept the nuts in the cake. Eating this fresh after cooling that same day, it was only ok. But eating it from the fridge the next day? Insanely heavenly. I've never had a cake taste so much better the 2nd day. Even my young daughters loved it, they want me to make it as their birthday cake...over chocolate!! I can't wait to have an excuse to make this cake again.

GA Peach Pound Cake

Reviewed: Jul. 29, 2008
Unfortunately this recipe didn't go over very well with my family, my 3 young daughters included. It's definitely better warmed up, perhaps if I add a side of ice cream and fudge it will get eaten faster. I think if I made this again, I would puree the peaches instead of dice them. They didn't taste like I had expected. The cake seemed to lack flavor. I think if the cake had more of the sweet flavor of peaches rather than chunks of them, it would be what I had hoped this cake would be!

Taco Seasoning I

Reviewed: Jul. 28, 2008
I think these is a great substitute for the packaged seasoning mix you get at the store. It's spicier than we were used to, but that's not a bad thing! The only thing I think it lacked is salt - it just didn't taste like there was enough there. But that's easily corrected, and even possibly worth leaving it up to the person eating the dish to correct themselves, for their own taste.

To Die For Blueberry Muffins

Reviewed: Jul. 28, 2008
This recipe is fantastic. I'm not a big blueberry muffin person, but I would gladly eat these on a daily basis if I could!! I used brown sugar for the toping instead of regular sugar, though next time I'm going to try it as the recipe is written. The brown sugar seemed to sink into the batter and while good, it just wasn't all that attractive. I also used buttermilk...definitely the way to go! A quick subsitute for buttermilk is a tbs of lemon juice mixed with a cup of plain milk - one of my favorite baking "secrets". Try this recipe, you won't be sorry!

Burgundy Pork Tenderloin

Reviewed: Jun. 10, 2008
Wonderful recipe! I made a few changes. I didn't add the celery or onion as I didn't want to have to strain it out of the drippings for my gravy later. My family doesn't really care for wine flavored food, so I used chicken broth instead of the wine, and used chicken gravy mix. This is the best gravy I've ever had! So full of flavor. I really was prepared for this not to turn out quite as well because of the changes I made, but I was incredibly surprised. I will be making this again and again!

Salsa Chicken Burrito Filling

Reviewed: Apr. 16, 2008
This was pretty good, though I still think it was sort of bland. Could possibly be because I made a huge pot full of it, and the amount of seasonings could have been off. I divided it and froze much of it, this freezes very well. I also used homemade taco seasoning because I was worried about the salt content. I used half breast meat and half thigh meat, which I think really added to the recipe. If you're looking for something to make that will freeze well for later, try this. Just be sure to test out the taste to ensure it suits your own!

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Apr. 16, 2008
This was pretty good. My kids wouldn't touch it, but I suppose that's asking too much! Make sure you like the taste of balsamic vinegar if you make this. Otherwise the taste will get old REAL fast.

Quick Gnocchi

Reviewed: Apr. 16, 2008
I'm sure they weren't that good because this was my first time making them. But, they were so sticky I had to add a ton of flour, and leftovers of this stuff is horrid. Not too terrible the first day but I tossed leftovers because they were so mushy. :( I found the freshly made product too bland, I wish I had read the reviews and added some cheese and other spices to the mix before cooking. Maybe that would have made a difference in taste, though it wouldn't have saved the leftovers.
