About this Cook
I grew up around food. My Irish grandmother was an amazing cook, and my Italian mother was as well. I had a lot to live up to, and have been working on that for years now. I think I can hold my own. ;) At least my husband thinks so.
My favorite things to cook
I love to cook when I'm not feeling rushed. When I don't have to work, I love preparing meals. It doesn't matter what it is. The more homemade, the better. Right now I really love making homemade breads. I also LOVE planning and cooking for large parties.
My favorite family cooking traditions
Baking for the holidays. Nothing in particular, I've been creating my own traditions for the holidays. I have a few recipes that are must haves each holiday season, and I have been asked more than once to bake treats for money during the holidays.
My cooking triumphs
I think baking breads from scratch has got to be the most gratifying to me. They look so beautiful and taste so good!
My cooking tragedies
If you ask my husband, he will tell you there were only a few times I've ever made something he didn't like. And we've been together for 13 years. Nothing outrageous, just a few learning experiences along the way.

Chili Sauce
This can be a good recipe with a LOT of additions. It was far too sweet even though I only added 1 tbs of brown sugar. I also ended up adding garlic powder, onion powder, chili powder, red pepper flakes, salt, coarse black pepper, soy sauce and a dash of hot pepper sauce. NOW it tastes like what I think chili sauce should taste like. With these additions I will continue to make it.

White Cheese Chicken Lasagna
uhh, YUM. This was so good, everyone in the family loved it. Minor changes - I used homemade lasagna noodles, steamed fresh spinach, and I added pureed zucchini and broccoli. Didn't have any ricotta so I used cottage cheese. I mixed the spinach, zucchini and broccoli with the cottage cheese to make layering easier. I chose not to cook my noodles ahead of time so I added 1/2 c of water to the sauce, but they didn't cook that great in the white sauce (I've had great success not cooking them ahead of time for traditional red sauce lasagna). Next time I'll cook them ahead of time for sure! Will be making this again.

Cottage Cheese Chicken Enchiladas
this was really, really good. I went all the way and used homemade taco seasoning, homemade enchilada sauce and homemade tortillas. Insanely good. My only complaint is that I did NOT like the smell of it being reheated, so I wouldn't eat it (but my husband gobbled it up). But that's just my own weirdness coming out. ;)
