BJ's Easy Blackberry Cobbler

This is scrumptious! The sweet tangy berries and wonderful crumble is the perfect mixture! I have to leave out the cinnamon though - I'm allergic. I don't miss it. ;-)

Stuffed Pepper Soup III

I didn't have cilantro (eliminated) or fresh peppers (used a frozen mix of 3 peppers & onion). I also halved the recipe (except for the peppers). I forgot the cheese on top too. However, my husband thought it was good. He thought it needed more peppers to give it that stuffed pepper taste. I thought the potatoes were a bit odd too, but it tasted pretty good. Good enough that I shared it on Facebook!

Macaroni and Cheese V

I didn't have dry mustard, so I skipped that ingredient. I also followed another reviewers recommendation to use 1/2 cup of Parmesan and 1 1/2 cup of sharp cheddar. I mis-judged the amount of salt needed, so mine needed more salt. It was a bit grainy, but tolerable. My husband liked it, but for one reason or another my picky 20 month old wouldn't try it (he's in that stage). I liked it too.

Slow Cooker Pork Chops II

These truly were 'fork'-chops! I used a whole can of broth & a sprinkle of crushed red pepper (instead of paprika), but otherwise followed the recipe. I served it w/ rice cooked w/ some of the liquid as well as some green beans cooked w/ some of the liquid. It was a great meal - even my 20 month old loved it!

Oatmeal Banana Nut Bread

I made this for my husband. I actually followed the recipe for a change w/o any significant changes. I used 1/2 shortening & 1/2 butter and an unknown number of bananas (mine were pieces left over from my son that I'd frozen). I also added a pinch of cinnamon. The bread was nicely moist and my son & husband liked it. My parents enjoyed it as well.

Easy Potato Sausage Soup

I used the crock pot like another reviewer. I also used garlic, fresh carrots & celery. I sauted the onions, green peppers, & celery in the margarine & added some bacon fat. I chopped the carrots quite finely & put them w/ the water, chopped smoked sausage (I chopped it finely like the carrots) and bullion cubes (3). I cut my potatoes & pre-cooked them in the microwave to make sure they got soft. I let all this simmer in the crock-pot for 4 hours. Then I added the potato flakes (2/3 cup) and milk. My husband liked it quite well. I liked it quite well too.

Creamy Drunken Mushroom Pork Chops

I really tweaked this recipe a bunch. I didn't have cream of mushroom soup, but I did have 1/2 a tub of ranch chip dip. I didn't have red wine open, so I used white wine. I added a shot of Worshestishire sauce b/c I like the flavor. I did everything else pretty much like the recipe (I think). I kept the sauce & passed it to my mom who used it as a base for a chicken dish as well. My hubby & 19 month old liked it too.

Irish Spicy Cornbread

I didn't have Tabasco sauce, so I left it out. I also didn't have a cast-iron skillet, so I used a foil lined 13x9. I did everything else just like the recipe. My hubby said next time to leave the cayenne out b/c it was too spicy for us (and my 19 month old son). Otherwise, its a great cornbread!

Chicken and Dumplings IV

Husband LOVED it! I used 2 cans of chicken w/ juice as well as a can of chicken broth. I added water for the rest of the liquid. I also added some peas, carrots, & seasonings as other comments indicated. I also followed the suggestion about rolling the dough out then adding it (plus my husband indicated he liked the square dumplings). The dough was really sticky, so I used extra baking mix to coat it while I rolled it. This was very easy & didn't take very long. I'll definitely make this again!

Rosemary Red Potatoes

I always tweak the recipes (I get it from my mom) I used 4 cloves garlic, a rosemary/garlic/seasoning insead of garlic salt, & added sharp cheddar cheese sprinkle on top after baking. My husband liked it ok (it needed more salt - should have used some since I cut out the garlic salt). My son wouldn't really eat it, but he's 19 months old & very picky right now. I liked it pretty well. I used the ziploc bag method. Mine stuck to the foil too. It was ok, but not as good as I was hoping. Of course, it might work better if I followed the recipe.

Drunk Dogs

My family loved it! I again (as always) cheated! We didn't have enough ketchup, so we used barbeque sauce as well. We used Evan Williams whiskey w/ the full amount 1st & then the next day I just added however much I felt like. We let the dogs cook for a long time in the crock pot. We used little smokies the 1st day. The 2nd day I used some little smokies, cut up smoked sausage & 4 hot dogs.

Blooming Onion and Dipping Sauce

I cheated (like always) & tweaked a bit. Instead of individually using ketchup & horseradish (plus seasonings) I had some extra hot cocktail sauce that I used. I used the additive amount of horse radish/ketchup. I didn't add any more cayenne or other hot spice. However, I did add the oregano & other spices. We used it for fried mushrooms. Everyone *loved* it. The spice was a good kick & it was nice & creamy.

Ham and Beans

I tweaked it a bit. Italian seasoning instead of Parsley, 1/4 cup brown sugar, celery & green peppers w/ the onion, a ham steak, season salt instead of regular salt, and the "ham" packet from bean package. I used the crock pot (I boiled the beans for about an hour on the stove to soften them) & let it cook all day long. My husband is actually eating the left-overs - a miracle! I'll definitely save this recipe & use it again.

Banana Bread - Quick Bread for Machines

My 17 month old son loves this bread. I added an extra 1/2 a banana & a splash of vanilla as per other reviewers. I don't particularly like banana bread, so I haven't tried it. However, my mom says its pretty good. I'm hoping my husband (who I actually made it for) likes it as much as our son! I used my machine's Raisin bread setting since mine doesn't allow timing changes. Oh, and I freaked out a bit b/c I could smell what I thought was burning, so I pulled the plug on my bread machine. However, there was still a patch of dough - so I popped it into a pan & cooked it the remaining 20 minutes. Turned out moist & soft!

Spanish Squash

I didn't have cumin or cilantro so mine was a bit bland. I used fresh garlic, season salt, beef bullion cube, and steak seasoning. My husband gave it 3*s. He ate seconds & he says he'll eat it again, but I'll have to make sure I add more seasoning. I also cooked some white rice for about 12 minutes of the 20 minute recipe, then added the rice to the meat, squash, etc mixture to soak up some of the juices. I don't like tomatoes, so that was a downer for me. It was pretty good though. I'll try it again.

Grilled Sausage with Potatoes and Green Beans

I made this with frozen mixed veggies instead of just fresh green beans. I sliced my potatoes and cooked them in the microwave with the butter prior to baking. I layered the potatoes on the bottom, then the mixed veggies, and then the sausage. I baked in the oven at 425 covered w/ foil for 30 minutes. I then uncovered & cooked for 10 more minutes. Everything was nicely cooked through. For my own serving I added parmesan cheese, but my husband just ate it as is (plus extra salt & pepper). He liked it an its a nice change from chicken!

Tuscan Cream Cheese Spread

I didn't have sun-dried tomatoes so I used roasted red bell peppers instead. I chopped everything up with my food processor. I also let the cream cheese warm to room temperature and then whipped it with my mixer to make sure it was smooth. Then I added the cream cheese to the rest and mixed it together w/ my electric mixer. The flavors were wonderful. Everyone raved about it. We had an Italian/pasta night and it went well with everything. Yum yum!

Cucumber Dip II

I brought this to our Derby party 2009 & got rave reviews! I drained the cucumbers and rinsed them. I also misread the directions & added a tbs of garlic salt instead of just a tsp. No one complained though. I also added some dill weed, celery salt, and a little sour cream. This recipe is easily altered to taste (various herbs & spices). I actually called it Benedictine since that's a traditional Derby dish. Its very similar. Loved it with veggies as well as with Lime Tostitos!
