Salsa Chicken

I made this for dinner tonight and we loved it! I ended up using 2 kinds of salsa (on each half of the pan) because that's what I had. I served it with a corn bread casserole. This is a keeper!

Spinach Quiche with Kid Appeal

Made this for dinner tonight. It was delicious! Everyone in the family really liked it--even our 2 year old daughter. Well, she ate a big bite then wasn't too interested in more until we told her it was green eggs and ham! It was a big hit and we'll make this again!

Caramel Peanut Bars

I love these bars! I've made them several times with great results and rave reviews. I love the saltiness of the peanuts with the chocolate and caramel. I do make one change from the original recipe, however. I do not use the caramels and cream. Instead, I pour caramel ice cream topping over the bottom layer, chocolate chips, and peanuts. This makes them a little quicker and easier to make. I've also doubled the recipe and baked in a jelly roll pan. This recipe is definitely a keeper!

Baked Ham

Made this for dinner tonight for 2 guys in the house who don't like ham. They both ate it up and said they really liked it! Maybe because I've got a little cold, I do like ham, but didn't think this was all that special. I made it in the crockpot with a can of diet coke. It was incredibly easy and I'll make it again!

Artichoke Chicken

Made this for dinner tonight. Took suggestions from others and use half mayo and half sour cream. It was really very delicious! It was very rich, too. I used marinated hearts which I think added to the flavor. I'll be making this again (but it won't be in the regular rotation because of the richness).

Italian Sausage Soup

I made this recipe as written. My husband and I loved it! He said I shouldn't change a thing when I make it again. He described the flavor as rich! It was a little time consuming, but now that I've done it once, next time will go faster. I may try adding a little more broth and tortellini next time. I was surprised how much this made, so if I do add more, I'll need a bigger pot. This was excellent

Toffee Apple French Toast

My husband and I loved this breakfast. I made one change, though. I cut the cream cheese into cubes and put them over the bread and apples. Then I mixed the sugars, toffee, vanilla, and small amount of milk and drizzled this on top. Followed the egg/milk directions as stated. The top did get a little dried out and hard, but covering the pan for most of the cooking time should take care of this. I'll be making this again!
