Connie's Zucchini "Crab" Cakes

I've made these like 4 times now. The first time I accidentally forgot to dip them in the flour and they turned out just fine! No need. I also don't drain my zucchini or do anything to get the water out & they turn out great. I grate the zucchini then immediately make the recipe, maybe that's why; they don't sit around getting watery. Also, I only use 1/4 c oil & I think I could even use less. I love these! So good. Think I might try the oven version next since it would be alot healthier.

Zucchini Tomato Pie

I wanted to love this, I really did. It's just so bland! At the very least it needs some melted cheddar or mozzarella on top or mixed in. But mostly, it needs alot more herbs & spices. Maybe some Italian seasoning, or something. I didn't have time to read all the reviews, but this same recipe is on Betty Crockers website so I figured I couldn't go wrong! I probably will make it again, with some tweaking. Thanks for the recipe, though..we still ate it, so that says something I guess!

Easy Salsa Meatloaf

This is good but to make it even better, instead of using Italian bread crumbs, use your favorite flavor of crushed up Doritos or other brand of flavored tortilla chips! Excellent!

Easy Sausage Stuffing

Made this this morning for Thanksgiving dinner. It is very, very tasty & everyone liked it. One tip I would add is that I wanted to use my own dried bread cubes, so I used 8 cups of cubed white bread. However, it was kind of soupy after I mixed it up so I guess that is because I used the real bread instead of the pre-made stuffing croutons. If I were to make it again, I would actually cut the liquid just by about a 1/2 a cup & just use 2 cups of chicken broth. It was even kinda soupy when I got it out of the oven, but once I let it sit about 10 min. it was ok.

Caramel Brownies

I just made these. Didn't have any nuts so didn't use them but i love nuts so would use them if i had them. Also I only had a brownie mix not a cake mix so that's what I used. And lastly I only had milk chocolate chips but OH MY thay are still so good. I didn't understand how you could bake one layer first & then add another layer & bake some more that the bottom layer wouldn't be too done, but it wasn't. Very good & I'm sure it is great just the way it is written. I didn't change the recipe intentionally, just had to go with what I had on hand. Thank You...this is going in my recipe box.

Pumpkin Bread Recipe

Just took this out of the oven & had to taste it. It is scrumptious! Granted, I didn't use the the Chinese spice either, just went with what I had on hand, which was pumpkin pie spice, I used 3 tsp of it. The rest of the recipe I kept the same . The reason I wanted to use this recipe is, it only makes one loaf. It is SO moist and just wonderful. Mine didn't turn out as high as in the pic above, but nonetheless, a wonderful pumpkin bread recipe, delicious. Thank you!

Strawberry Pizza

This is so good...to make it easier I also used 1 &1/2 tubes of sugar cookie dough. Then I used 2 small tubs of strawberry cream cheese & mixed it with 1 cup of powdered sugar. After I put the sliced strawberries on I drizzles it with warmed in the microwave strawberry ice cream topping. Divine!

Fluffy Peanut Butter Frosting

Don't be afraid to use stick margarine if it's all you have! I did, and it was still very yummy! Not greasy at all as some had suggested and very fluffy! I added a little vanilla and only used a cup and a half of the sugar....so good! Thank you!

Scalloped Tomatoes

These are scrumptious! The only change I made was to add a small chopped up green pepper because I had a lot from the garden. I think maybe if I made it again I might decrease the sugar by just a tad and maybe even use a couple more tomatoes. But just wonderful the way it is. Thank you!

Rhubarb Strawberry Crunch

This is SO good!! I had made rhubarb crisp before but never with strawberries in it. They take it to a whole new level! You mostly just taste the strawberries. The only thing I did different was I thought a whole cup of butter was a bit much so I reduced it to one stick. Didn't reduce the other ingredients in the topping but I probably will next time just by a little. Wonderful!

BREAKSTONE'S Classic Cheesy Potatoes

this is much better using the o'brien potatoes which have the onions & peppers in with it. Gives it more flavor. Also I always use 2 cans of soup & a whole 8 oz container of sour cream which makes it less dry. One last thing I do is use corn flake crumbs sauted in margarine instead of the ritz crackers. Wonderful!

White Chocolate Chip Oatmeal Cookies

These are so good, just the way they are! The only change I made was to use margarine instead of butter since that's all I had in the house. But they were still wonderful! The batter is very dense and a little hard to work with but the end result is so worth it! Thank you so much for a great recipe.

Southwest Style Creamy Corn Chowder

This soup is really good but the celery was still crunchy after 4hrs on HIGH in the crockpot..I would saute it first or leave it out...and add 2 peeled potatoes to make it a true chowder. The cream cheese really makes it good & creamy, though.

Slow Cooker Carnitas

this was really tasty...used a smaller roast than called for so I should have cut down on the liquid, as mine was a little watery. But still great!! put it in the tortillas with cheese, sour cream, tomato & salsa. Yummy!!!

Two Tier Strawberry Pie

this is great, i did use a whole 8oz brick of cream cheese and doubled the sugar. Used 3/4 of a small cool whip. It was wonderful! I thought I wouldn't have enough room on top for the strawberries but it worked out fine. I also cheated and used some store bought glaze and it tasted great. One last thing: if you want it to taste like a PIE use pie crust. A graham cracker crust tastes good too but then it is basically a no bake cheesecake. This is just like what I had at Bob Evans last week and I was trying to duplicate it so thank you!!!
