Mom's Good Cinnamon Rolls

I'm giving this a 5 for the dough!!! These turned out AWSOME!! A few adjustments were...I used milk intsead of water and I put 2 tsp. vanilla in the egg/oil mixture.(it makes the dough a little more flavorful...less like plain bread. I did these as a big rolled out "sheet" and smeared soft butter before my cinnamon/sugar. I keep a tub of sugar/cinnamon/flour that I use for my cinnamon rolls and fruit pies.(1/2 C. brown sugar, 3/4 C. white sugar, 1/4 C. flour, and 4 TBS. cinnamon...the four helps keep your filling inside the cinn. rolls, and works to thicken the juice in your fruit pie) These are also great if you spread diced apples on the dough before you roll it up...YUM!!

Mom's Zucchini Bread

This is a great recipe and stands up to "adjustments"... 1 cup of sugar is plenty (unless you like things really sweet) I used 1/2 C. Brown and 1/2 C. white sugar, 1 tsp.allspice and 2 tsp. cinnamon, 1/2 C. oil w/ 1/2 C. applesauce, the juice and zest of one lemon, and 4 zucchini. The last time I made this I also added 1 C. frozen blueberries...delish!!!! You can adapt this recipe to use apples, bananas, or carrots instead of zucchini. Great basic recipe!!! Thanks!

Ultimate Irresistible Granola

This is great granola. I didn't have enough honey so I use 1/2 honey and 1/2 light corn syrup. I didn't add the wheat germ. I got great clumps of crunchy granola that you could eat as a cereal, on fruit or yogurt, or just as a snack. Thanks!!

Blueberry Cream Muffins

This was a great and simple recipe!! I added the zest of one lemon, 1 tsp. cinnamon, and (almost)1 tsp. nutmeg. It really wakes up the flavor of the blueberries. Like others suggested, I used 1 (loose) C. brown sugar and 1 C. white sugar. You can fill these pretty full and the pop right up when they bake with a nice dome. These are a keeper. This basic recipe would also be great with different flavors or fruits...maybe nextime I'll try chocolate chip for my boys... Thanks for this recipe!!

Fluffy Pancakes

This was a great and EASY recipe. I did make a few adjustments... I only used 1 1/2 tsp. of baking powder because I don't like the bitter taste and i used melted butter instead of oil.(I did heat the milk slightly so the butter wouldn't "clump" as another person said when the melted butter hits the cold milk) Next time i will double the recipe...it only made 7 med/small sized pancakes which was only enough for my son and his best friend (they're 10!! and love pancakes)

Blueberry Muffins II

I found this recipe awsome!!! It's more like a cake muffin than a heavy biscut muffin. I added vanilla, a little lemon zest, and cinnamon and didn't mash any blueberries because I didn't want them to be gray/blue through-out. I topped them with cin/sugar. They are light, airy, and DARN GOOD!! Thank you for this recipe, it's a keeper!!!
