Grandma's Carrot Cake

My 19 yr old son requested carrot cake for his birthday. I just made this cake. I made it exactly like the recipe says, even sifted the flour like it said to do. I didn't have crushed pineapple but I had chunked. I drained the pineapple and put it in a blender to "crush" it. The cake was so moist! My family loved it. I used the traditional Betty Crocker recipe for Cream Cheese frosting as he requested the "rich stuff". My sons said I should go into the bakery business. This is a real keeper! Thank you!

Cheesy Artichoke Dip

This is the BEST! We love it! I have 3 teenage sons and when I make this, I turn my back and it is GONE. It is so good on bagel chips, triscuits or sour dough pieces. I think those boys even use a plain ol' spoon! Very rich flavor but oh so good. If you watching fat grams, I think you could use low fat mayo and cheese at it would still taste great.

Chocolate Eclair Cake

You can uses all fat free/sugar free products and still tastes GREAT! I used a homemade frosting. I had all the ingedients and am not crazy about tub frosting. PERFECT! 15 servings =WW 4pts if you use all FF~SF ingredients. Frosting included. Layers should be grahams~1/2 of the pudding~grahams~rest of the pudding~top w/grahams. I flipped top layer over so a THIN layer of pudding would be on very top~you'll need to even out the pudding on top with a butter knife. Do this before frosting with chocolate. This helps to soften grahams. ENJOY. IT's GREAT! The frosting is not FF or SF~ mix: 3T melted butter with 1/4c Hershey's cocoa then add 1 1/2c powdered sugar 2t corn syrup 2t vanilla 2T milk mix. SPREAD on top. This is JUST like eclair frosting.

Poppy Seed Bundt Cake II

The only deviation from the recipe was that I used lemon cake instead of yellow. So moist and good, gone in one night! As we say in this house "esss tha besss, i lub et"(Nacho Libre).

Chicken Wild Rice Soup I

This is the best! Supper good. There would be no problem using 1/3 less butter and substituting milk for the 1/2 & 1/2 it is rich and thick and yum. I have 2 in my family who don't like mushrooms they both has 2 big bowls. Try it with sour dough bread.

Beef Spinach Hot Dish

I had to change the recipe because I didn't have all the ingredients. I left out the mushrooms and sour cream. I added about 2 cups of cooked macaroni. I used 20oz or fresh chopped spinach. All other steps and ingredients were the same. It was VERY good and very easy to make.

Stuffed Pepper Soup I

Great Recipe! I only used half the gr. beef as we are watching fat intake. I reduced brown sugar to 2 TSP. Added an extra bell pepper. It was perfect. thank you for the recipe! it makes 10 cups. Good for those who are "watching their weight".

Coconut-Raisin Rice Pudding

I just made this recipe. I omitted the butter and just sprayed the pan with Pam. It was good and I agree it is a great recipe for left over rice. Very easy, too. The 4 of us felt like it was more like flavored rice and not like rice "pudding". We added cinnamon also.

I sprinkled cinnamon on top before baking. Thought these were a bit dry, cooked exactly 20 minutes. They were super easy and I had all ingredients on hand so I give them a 4. The lovely photo you see is my 1st photo upload. :-)

Pineapple Bread Pudding

Made a few modifications because of what I had on hand. Used hot dog buns, cut butter to 1/2 cup. Used 1/2 eggs and 1/2 egg beaters, 1/2 white sugar and 1/2 brown sugar, craisons instead of raisons..YUMMY!! All gone in a flash. Served with no-sugar vanilla ice cream! Don't think twice about trying it. Pretty fool-proof I would say.

Golden Rum Cake

I made 2 of these to take to 2 different parties. No one loved them. all said TOO much Rum in the glaze. SUPER moist! will make again with different glaze. Poking holes in the cake and putting it back in the pan to soak up glaze works well. I will use pineapple glaze next time.

Followed the recipe exactly. used a 15 X 11 cookie sheet. sprayed the wax paper with pam...It was absolutely perfect. Easy and wonderful. don't be afraid. It is no problem to make.

Chicken Pot Pie IX

I used canned peas...put them in right on top after putting chicken mixure into crust. HINT for crust: Thaw slightly~ careful separate from pie tin.do not flip pie crust bottom of crust will be touching top of chicken filling..seems to work best. EVERYONE LOVE THIS RECIPE!!

Rosemary Chicken with Orange-Maple Glaze

If you want to get out of your chicken rut Try this quick and easy recipe! Very flavorful. It has ingredients that are staples in many homes. I don't really like cooking with wine so I just used chicken broth instead. Served with quionia and broccoli. yummy!
