Roasted Autumn Root Vegetables

Had to modify it a bit. I didnt have any vegetable broth, or basalmic vinegar, so I used a splash of white vinegar in before I put them in the oven. This dish was yummy! Even my kids enjoyed it. I added onions, more potatoes, and of course the italian seasoning. I didnt salt until after the dish done. It came out wonderful. Now.. If I could just stop eating it...

Eggplant Parmesan II

This recipe was very yummy. I did change some things, Instead of all breadcrumbs, I did half Panko and half italian bread crumbs. I baked the eggplant at 400 for about 20 minutes, turning once. I fixed some speghetti with it, and put the eggplant on top. all in all it was very yummy! will definetly make this again. althought it is a job to do! worth it in the end!!!
