Egg Drop Soup II

Very good! I give it only three stars because I did add a little chopped carrots and celery. Then added green onion as garnish- also a little pepper. Very good. Next time will double receipe.

High Altitude Banana Chocolate Chip Cookies

This is soo good! I made 3 changes- for the sugar did 3/4 c. brown sugar and 3/4 c. white sugar, put two bananas in the mix (about 1 1/2 cups), and put all the mix in a caserole dish and cooked it for 15 min. at 375! Delicious! Kinda of a cookie/cake, will make again.

Spice Baked Rice

Seemed to be a crowd pleaser. I had spicy V8 in the house, so used that in replace of the regular tomato juice it called for. Also didn't have any stewed tomatoes so I used a can of tomato paste. Also used ground turkey instead of hamburger. Was in a rush so after browning the ground turkey I put the rest of the ingredients in the pan and brought to a boil to heat. Then put in casserole dish with cheese on top and only cooked in oven for 15 min. I thought it was decent, but liked most that it was quick and easy to throw together.

The Best Thai Peanut Sauce

Changes: used 1/2 c. crunchy PB, no cream, full can of coconut milk, and didn't quite have enough lime juice (maybe 2 tbl)Only used 1/2 of sauce for dinner for 2, and warmed up on stove with a little cornstarch to thicken. Cooked up some chicken and rice noodles. Next time probably wouldn't add quite as much hot sauce. I really liked the flavor, but my sweetie said it could of been a little sweeter.

Blueberry Sauce

We liked this, gave low rating because didn't follow recipe exactly. Had peach/mango juice on hand, so used that. Forgot to add sugar, added 2 tsp afterward. Was pretty thick, added another 1/4 c. of water. Also used on waffles with a little syrup and was fabulous!

Flavorful Beef Stir-Fry

Really liked the sauce!! I followed the advice of others and used half the sauce, minus the cornstarch, to marinate the steak for a few hours. Then doubled the sauce to cook the meat and then added the cooked veggies.

Minnesota Pork Chops

Was pretty good- made some alterations. With 3 pork chops(boneless)I added 6 oz. of wild rice, a tsp. of chick bouillon to 3/4 c. water, can of cream of mushroom, and cooked on 350 for 1 hr and 20 minutes. Pork chops were dry, but rice was delicious. I did do as the directions say and brown the pork chops slightly, I don't think that is necessary for boneless.

Chicken Enchiladas

Really enjoyed this- very moist! I did substitute plain yogurt for the sour cream, did not add onions or lettuce, and used a 19 oz. can of Enchilada sauce.

Coconut-Lime Chicken with Grilled Pineapple

Not the greatest. With some of your own tweaking it could be better. I did not follow it exactly (marinade was with beer), but it was the white sauce that was most disappointing. I even added more coconut milk and it was just ok.

Chinese-Style Cheeseburgers

This was a very good change from the regular burger. Made only 4 patties out of 1 lb. but they were just right for our bun size. Added the full can of water chestnuts(8 oz.) and it wasn't overpowering at all. Also used one egg and 2 tsp. minced garlic, did the sauce exactly as written, and loved it! I did change the sauce a little bit because I used 1 tsp. Dijon mustard and 1 tsp. sweet hot mustard. I would suggest making the sauce in a separate bowl before adding it to the hamburger so you can do a little taste test. I thought the sauce wasn't going to be enough, but the hamburgers were a perfect moistness!!

Thai Pineapple Chicken Curry

I didn't exactly follow the recipe, but with the member reviews it was definitely a 5! I made(good for 2 healthy servings)it with 1 can coconut milk and 2 tsp. green curry paste,followed review about mixing curry with vegetable oil first. Used shrimp and ~6 oz. frozen vegetables, used member advice to thicken (2 tbs. flour with 2 tbs. water- mix in cup and then add to sauce at end if not thick enough for you)and added pineapple at very end! Plan on adding a little garlic, basil, and fish sauce next time- Then it just might be perfection!
