Very yummy recipe! My dad who doesn't usually eat a lot of bread loved this! I followed some of the other suggestions and made double the topping and put half in the middle and also used half brown sugar. Definitely a keeper, can't wait to make this again very soon! As others stated, just remember, this is a bread, not a cake, so its not overly sweet.

Eggplant Parmesan II

Made this last night for my family and they LOVED it. The only thing I did differently is that I cooked the eggplant for about 10 mins on each side and I didn't use 3 whole eggplants either.

Ninety Minute Cinnamon Rolls

This was my first attempt at making my own cinnamon rolls, they turned out amazing! Very moist and delicious. As suggested before, I baked them in a baking dish, and i also added a little bit more melted butter, sugar and cinnamon on top before baking. For the frosting I used a recipe from this site that calls for 1 (3 oz) package of cream cheese, softened; 1/4 cup of butter, softened; 1 1/2 cups of confectioners sugar; 1/2 tsp vanilla extract; 1/8 tsp salt. Just beat all together and spread of warm rolls.

Chicken Enchiladas I

My parents are very picky when it comes to what they eat, and they LOVED this. They were telling everyone how it tasted very authentic, and people have started asking me for the recipe! The only changes I made was I didn't use the 1/2 cup of water, I boiled and then chredded the chicken, and I used enchilada sauce instead of taco sauce. Great recipe!
