Restaurant-Style Prime Rib Roast

Terrific recipe! Perfect the way it is, but if you are "blood suckers" as my husband & I are, roast for 15 minutes per pound - than it will be perfectly rare all the way thru. Paired it with an outstanding Cab from Chile that I picked up at my local market for $10 bucks - Lapostolle Casa - a great find.

High Temperature Eye-of-Round Roast

This recipe is good but I think it's really calling out for garlic! I make a paste of garlic powder, onion powder, salt & pepper and olive oil. Smear it all over the roast and wrap it in plastic wrap. Let it sit for a few hours or overnite. I put it on my rottis - 475 at 15 mins per pound. Then take it off & wrap in foil for 20 -25 mins. Sliced thin on sourdough bread with horseradish sauce & pickled onion- doesn't get much better than this!

Easy Quiche

Made this just now for football playoff Sunday - my husband loved it, even though "real men don't eat quiche!" I used 2% milk, several different bits of leftover cheese, low fat Bisquick, spinach, onion and bacon bits from Costco. Good basic recipe to use when you open the refer to play "what's this?"

Chuck's Favorite Mac and Cheese

The weather here cooled way down-went from 95 to 55 in one day-so I decided to get away from the BBQ and try this mac & cheese casserole. Great combination of flavors! Make sure to pay attention to the quantities in the receipe- 8oz of pasta not 12 oz and you will come out allright. Also add a can of evaporated milk & a teaspoon of dry mustard powder. Top with panko crumbs mixed with a 1/4 cup parmesan. Make sure to use good quality local cheeses and don't worry about the fat. Savor the moment!

Boston Brown Bread III

This bread recipe is great. Baking in Central Oregon is always a challenge - I'm at 4200 ft and dry, so I used two smaller pans. The bread came out done in the middle with a nice crust. Also used Bob's Red Mill unbleached white flour & whole wheat pastry flour. Served with Boston Baked Beans made with Canadian bacon - great meal for a snowny Sunday afternoon.

South Coast Hominy

This dish is a meal in itself. I used panko for the breadcrumbs so the topping came out nice and crunchy. I also doubled the recipe 'cause all I could find here was a 29 oz can of hominy - I felt lucky to find that - most people in Central Oregon don't even know what hominy is!
