This is incredibly delicious and fattening. :) I ditched the frozen veggies and just sauteed some diced carrot and celery with the onion (in a LOT less than 1/3 cup butter!). Then I set them aside and melted a little more butter to make the sauce. For the chicken, I just bake a package of skinless thighs for an hour or so, let them cool, and then cut up the meat. Otherwise, I make this recipe as written. My husband loves it SO much, and all his coworkers are jealous when he brings in the leftovers!
