Banana Nut Muffins
These are delicious! I use 3 TBS melted butter and 1/2 cup brown sugar instead of the white. I have made them with and without the lemon zest; they are good both ways but the zest certainly adds something. I like to make these each week with leftover, too-brown bananas, split them and freeze them so they're ready to toast for breakfast.

Chicken Biscuit Pie
This is incredibly delicious and fattening. :) I ditched the frozen veggies and just sauteed some diced carrot and celery with the onion (in a LOT less than 1/3 cup butter!). Then I set them aside and melted a little more butter to make the sauce. For the chicken, I just bake a package of skinless thighs for an hour or so, let them cool, and then cut up the meat. Otherwise, I make this recipe as written. My husband loves it SO much, and all his coworkers are jealous when he brings in the leftovers!

Bryan's Spicy Red Lentil Soup
I really wanted to like this . . . it smelled delicious. But after two hours of simmering, the lentils were still hard as rocks. I substituted yellow lentils (the only available) for red; perhaps that was the problem. I will try this again by simmering everything else for a while, then adding canned lentils!
