Lemon Cake

I made this yesterday for our family Easter dessert and it was a HUGE hit. We all had to have seconds. Wonderful, simple to make, light and spongy and just the right amount of "lemony"!! This recipe is going into my "keepers"!! Thanks LaDonna !!

Baked Ziti I

Wow, wow, wow!!! Great recipe. I have been making the Pampered Chef version of this for years (with ricotta) but this is much better. I added 2 hot italian sausages to the ground beef to add a little spice (for us California girls) Yumma!! Also used fat free sour cream and mozzarella only in both layers. This is a gem!!

Campfire Potatoes

WOW-WOW-WOW!!! So simple and what a fantastic recipe. My family loved it and it definately will become a favorite in my recipe box. I added some extra Veggie seasoning and cooked on a low-medium heat for 40 minutes while cooking a top-rack pork roast on my grill. The worchestershire sauce adds the perfect flavoring and the chicken broth makes for a delicately steamed creation. Yum!!! Can't wait to make this again.

Cottage Cheese Chicken Enchiladas

WOW-WOW-WOW - I am a California girl who regularly enjoys our traditional mexican cuisine here. I was most reluctant about this one but was intrigued because of the reviews and I was so incredibly surprised. This recipe will go into my permanent recipe box. We loved it. I'll be preparing this next month for my bunco group at my house. My teenage daughters loved it too. It really is more like a mexican lasagne and is easier served as a casserole. I followed the recipe exactly and didn't change anything. I have been sneaking bites from the refrigerator. It's even good cold. We thought the leftovers would be great rolled up in a flour tortilla with scrambled eggs and a bit of hot refried beans for breakfast.

Chicken Milano

Muy delish!! We really loved this sauce which I too doubled, as recommended by so many other reviews. Once the 10 minute simmer time was done on the garlic, broth and tomatoes, I processed in my mini food processor for a much less chunky consistancy and then simmered with the cream. It made a beautiful creamy sauce with a wonderful sundried tomato flavor. Will definately make this one again. We prefer a smaller pasta, so I will make with a spaghettini or an angel hair next go-round. This would be great with a lightly sauteed shrimp instead of the chicken also. Yum!!

Black Beans and Rice

Wow - we loved this recipe. I served it with carnitas tacos/guacamole. I made some changes as suggested by other reviews. I used 5 large cloves garlic and 1 whole chopped poblano, 1 can chicken broth and sauteed with the onion and rice. Once the rice mixture was cooked, I used 1 can drained tomatos with green chiles, 2 t. cumin, 1/2 t. cayenne, 1 t. ea salt and pepper, 1/2 cup chopped cilantro and 1/2 cup raw chopped red onion. It was outstanding and quite spicy, just how we California Girls like it!! A dallop of sour cream on top tames the spiceness. This is definately a keeper in our family!!
