Delicious Gluten-Free Pancakes

These were really good and quite easy to make (as far as gluten free cooking goes!). I used less liquid than called for. and they still rose quite a bit as they cooked. I froze half the batch and pop them in the microwave for 1 minute each for a quick breakfast.

Chicken Enchilada Soup III

Yum! This was easy and tasted great. You could modify it in many ways and it would still be great. I added a can of green chili's and baked some corn tortilla strips and they were a great addition. Next time I think I will add some black beans.

Three Ingredient Peanut Butter Cookies

Really good- I bake them for about 10-12 minutes since I like them crunchy. Sometimes I add chocolate chips or hersheys kisses on top.

Jalapeno Chicken II

These were great! I had to wrap two slices of bacon around them to keep the pepper and cream cheese in. I thought this was really easy to make overall, will make again. My husband liked them so much he ate two!

Chorizo Stuffed Bell Peppers

A little bit time consuming (especially if you have little kids pulling at you while in the kitchen) but well worth the extra work! This is delicious! The combination of cheeses and chorizo are great. My husband loved this dish, way more than a traditional ground beef stuffed pepper that I had made before. Will make it again, without any changes!

Roasted Beet Wedges

I followed the recipe as is by putting the beets in foil packets but then I put them on a charcoal grill for 1 hour over indirect heat. They turned out great! I would say they could have even stayed on longer because I liked the pieces that were on the bottom of the foil and caramelized a bit more.

Adrienne's Cucumber Salad

I was looking for a recipe to mimic a marinated cucumber side dish that I've had at Thai restaurants. This one hits the nail on the head- exactly the taste I was looking for! I use a mandolin to slice the cucumbers and onions really thin. Make sure you make enough of the "liquid" to cover all of your sliced veggies. You can pour off some of the liquid after it has marinated overnight as it will be quite watery. Very good flavor- whoever said it needed oil and salt are out of their minds- this is perfect as is for this type of salad!

Strawberry Jam

I did the plate test running a knife through it and it still got a little too thick. Next time I'll boil it a little less. Great recipe...uses much less sugar than the recipe in the packet of Sure-jel that I used to make a different batch of freezer jam. Overall a success!

Maple Glazed Sweet Potatoes with Bacon and Caramelized Onions

So good, everyone loved it at our Thanksgiving dinner. Really liked the flavor combo of maple, caramelized onion, bacon and thyme. Of course everything is always better with bacon, can't go wrong with this recipe!

Maple-Mustard Glazed Pork Chops

I was looking for a quick recipe for pork chops about 1 hour before dinner...so no time to let it marinade. I followed the recipe completely (except for the letting it marinade for 6 hours part) and it turned our great! Loved the glaze, it ended up being not too sweet, even my savory loving husband said it's a keeper.
